First things first, I didn't miss any of the usual dark spices, Cloves, Allspice, Nutmeg, Cinnamon, Cardamom. I can feel the Pepper more, still it is not as fresh as KFC, although I have ground it today, I believe there is still a space to increase Pepper more, excluding those strong dark spices helped here My herbs didn't include Sage, and I didn't miss it either! I will not increase the total herbs more than this level (1/2 tsp) It smell different, in a good way, but I still have to redo this further to be sure. DT

It tastes closer, the aroma is not as intense as KFC, but there is something different this time that I need to study more.

I'm an increase the pepper fan. We are close in the amount based on you using 300g flour. I am thinking going a bit higher next cook. I also agree less is more on the other H&S!
And, thanks for making me hungry!

The 4 tsp Pepper I used are 9.5g-10.5g to 300g Flour, that equals 6.33g-7g Pepper to 200g Flour.

Deep Taste, are you heading in the direction of accepting that only Flour, Salt, MSG, and Black/White Pepper are actually required whereby to tease out the note of KFC_OR?

Next Recipe DTXP 786
2 cups Flour
4 tsp Black Pepper 2 tsp White Pepper
1/2 tsp Herbes de Provence 1/2 tsp Lemon peel 1/4 tsp Chili, hot 1/4 tsp Garlic Powder
6 tsp Salt 1 tsp Brown Sugar 1 tsp MSG

Deep Taste, are you heading in the direction of accepting that only Flour, Salt, MSG, and Black/White Pepper are actually required whereby to tease out the note of KFC_OR? The Pepper profile is the most important thing in addition to pressure fry your chicken. Last time I visited KFC, I had one of the best experience, the piece was full of a fresh pepper taste and it was really hot. I will use Lemon peel next because I believe it will enhance and charge the peppery taste without covering it like other spices do. And 1 tsp brown sugar to boost things up. I tried all those spices all those years, I didn't get the note with any combination of them, so I don't believe what I am seeking is some spice or herb. DT

Thank you Deep Taste! You and many others have cooked recipes over and over again for decades using variations upon the litany of commonly presumed ingredients. And I'm rapidly approaching the point where I can add myself to this list. And just as you said above, the note is not springing forth from them for me either.

I mixed your Batch with Garlic Flakes and Garlic Powder from the Flakes, Gave more Garlic Boost on the eggs with the Garlic Flakes grind. I also Increased the Black Pepper Prior to the Cook I did not feel it was high enough on the egg or Pasta pallet I don't know the Brand of Herb De Providence you used compared to our Blend and it was low on savory flavor of the Herbs (needs Oregano Boost) Very Little KFC Aroma Note but had some flavor OVER ALL weaker then what I would wish. Definitely a citrus could help or a Lemon Pepper to Boost Pepper and Lemon. It went Great on the Second Dish with a sauce as it was NOT over Powered on the Thigh Pressure cooked Pieces with a Sweet and Sour Tang Sause we make (WAS A HIT with the chicken and recipe) Final though as a chicken stand alone coating Under Par But has potential with change DO NOT SEE aroma and NOTE coming without higher Pepper and Sage or a Poultry Seasoning to Get Aroma
