In the past I've contemplated that the Sage which is placed well down the pecking order may actually be Mexican Oregano (which also goes by the name Mexican Sage). Mexican Oregano/Sage is one of the (if not factually 'the') most deliciously aromatic Herbs I've ever experienced. It definitely expresses Carvacrol, but in a good way as opposed to Oregano expressing it in a brutally harsh way (as per my Oregano bias).
I simply have to try Mexican Oregano. It may (as per my bias dream) be capable of standing alone as the only Herb needed. Hmmm?

To me the most "missing" from Karl's would likely be a form of Red Pepper and Garlic. If he was made to drop a couple ingredients he may have felt they added the least to the overall flavor. Specially if Red Pepper was a mild paprika type. MSG - Somewhere in the mix. Glen didn't say where. Salt Black pepper White pepper Allspice Red pepper Coriander Ginger Thyme Sage Marjoram Garlic And to confirm my bias. Flop Sage to in front of Allspice and you have the GGG 99x. With the obvious that this recipe includes all the salt required. For bonus bias points for me. Drop MSG and here are 11 ingredients for Winston that can be added to a certain amount of flour as Karl does. Beat this around a bit

My bias/dream suspects (wishes, guesses) that Mexican Oregano at an entry level of around 0.50 to 0.75 grams in 200 grams of flour may stand in for (and replace) all of these:
Sage Savory Marjoram Thyme Oregano

And for bias triple bonus points for me. I don't believe that recipe is the real OR. It is likely a condensed version from MK. The real OR likely had more ingredients.
Savory might have been darn hard and expensive for Karl to source as well. If there is an extra ingredient in 99x as per DFN. I'd pick savory

I may take a shot to see whether Glen would confirm if sage was in the same "spot" for each recipe he was given. His answer would either really help my theory or destroy it. Either way, useful for me to know. I tried his ingredient order back then several times, trying to make it work. I didn't for me. I think it's incorrect and the 70s 99-X bag is more accurate and trustworthy. Glen also stated that descending order means the next item must be less than the previous one. This is obviously not correct. And regarding the measurements, that the sources "gotta keep some secrets." Well fair enough. But that already tells me something is wrong. It would have been to easy to recreate with the correct order. Make it harder to recreate so people will rather buy your product. It was a successful move.

And to confirm my bias. Flop Sage to in front of Allspice and you have the GGG 99x. Now place Tarragon between Sage and Allspice and you have 99 +X
