Nutmeg smells far better. No hint of in your face pepperiness. After having the spicy and peppery coffee with Mace, my Nutmeg coffee is not developing any noticeable spice flavor at all when at the same pinch level as for Mace. Far more subtle. But my nutmeg is old, and has likely lost much of whatever nature it was intended to have. There are actually many websites which parrot that Mace is less spicy and more subtle tasting than Nutmeg. I can assure you that all of these sources do not have a clue. I can see now where Nutmeg must be used at much higher levels than for Mace. Mace being peppery is exactly the reason i want to use it. I'd say my mace smells the same as my nutmeg but a weaker sweetness with black pepper background that nutmeg doesn't seem to have.

My fresh Mace has a pepper foreground as opposed to a pepper background.

Mace was replaced by Nutmeg in Many cooking and Baking over the Era's of time
coriander as far as words spoke was added By Bill S as the extra he used, and made it's was into Marion Kay Chicken seasoning 99x.
The reason Marion Kay was making waves with KFC was the Franchises WHICH WERE under CHS and Peter H Utah, Montana, Florida, Canada were the ones who were using Marion Kay spices and those Franchise were being compared BY other area KFC on why the Flavor difference, Then owners of Franchises in other states inquired if they could use the Marion Kay Spices in there State which were NO long under CHS control?
Marion Kay Tasted way better and stores which were very close to Franchises who used KFC were losing market sales and getting complaints about crappy chicken compared to the KFC down the Road next State

Mace Blades (Photo Generic) We did a Test with Mace Blades, Fresh Ground added it to Flour NO OTHER ITEMS I asked many people to SMELL the Flour There comments were smells Like KFC? So I added some Black Pepper, White Pepper, Sage Leave fresh ground with the Mace and Flour. WITHOUT A DOUBT these items can make a Aromatic KFC BUT FRESH FRESH items as I mixed a exact gram weigh of items BUT all Pre-Powdered items and LOST the majority of the NOTE AROMA. I mixed a 3rd Batch adding Ginger, Cinnamon, Pimento and it kicked the NOTE higher (BUT I may have added to Much as it did kick Back the original NOTE in A Mix which is the fresh ground items Mix 4 was White Pepper, Black Pepper, Ginger Root, Pimento Jamaican, Cinnamon, Garlic, Onion, Celery, Sage, Italian Herbs, Sun Dried Tomato, Chilli Pepper, Sesame Seed, Grey Sea Salt. YOU CANNOT Breath the Mix its so powerful Aroma in the open Bowl the Aroma is So Strong it is Over powering in the area.

Mace indeed evolves the note when combined with a source of Eugenol. But Mace is tricky. Too much and it becomes cloying, but too little and the note subsides to evaporates. The trick is to find the sweet spot for Mace. Allspice doesn't seem to deliver much on the Mace front. It's more Clove and Nutmeg and Cinnamon... But not in harmonious balance.
About 0.15 grams of Mace seems about right for addition to 200 grams of flour plus 1 gram of Allspice.
But the best bet is to use 0.25 g. Nutmeg, 0.20 g. Clove, 0.15 g. Mace, and 0.10 g. Cinnamon, and zero Allspice (or right close to this).
