Everyone seems to have leaned away from a items that had BIG use in BAKING in 1930's
CHS LOVED, LOVED Donuts it was something he was addicted to in a sense for treats.
The Donuts of the 1930's used Mace and it gave both aroma and taste to ALL Baking.
its has a great flavor with flour and also a sweetness
mix both Mace and some Nutmeg in the Original days all processing was done by hand and there were more mix of Mace and Nutmeg then the 2021 Mace.
Mix a Mace 75% to 25% Nutmeg

While I was in the process of placing an order on Amazon I tossed in a small jar of McCormick's 'Mace'. Hopefully it will arrive Monday so I can begin melding for my cook session #15.

I've never purchased H&S from Marion Kay. Of late, most of my H&S come from a 'relatively' local Amish community.

By sprinkling a very small amount of ground Mace onto (or rather, into) my scrambled eggs this morning, I've identified much of the "Sensory Overload" off taste in my cooked Recipe #15, which I was initially attributing to Coriander. Coriander at high levels is not completely off the hook yet, but Mace is not a taste I recognize in KFC OR. It is not even close. I'm now pretty convinced that the "Jamaican Jerk" flavor I was detecting in #15 was coming from the Mace. Mace is unbelievably potent, and it stands out as profoundly annoying and wrong at 0.5 grams in 200 grams of Flour. I feel that even at half this level it might repulse me. Mace is the single largest wrong turn I've ever made to date while on this quest.

I assume that in being from McCormick, and being freshly opened only immediately prior to entry into my mix, my Mace should be highly representative of a quality Mace spice. I can't chalk this one up to being sourced from an Amish bulk foods store.

Can't really comment on mace because i haven't used it yet but nutmeg will ALWAYS be included in all my attempts.
