Some substitution advice: PS: This website repeated the same blurb that Mace tastes more like Black Pepper... This potentially played some part in the over-peppering of my recipe #15.

Other advice was that Mace loses its pungent potency very rapidly with age. Since mine was freshly opened I was getting maximum pungency from it. And pungent is almost an understatement.

USED MACE DRIED Pieces or fresh NOT NOT Pre-ground Powder.
Using a wrong form is also why people get a soap taste from a Coriander.
I STRONGLY suggest Dehydrated Spice and Ground or milled Prior to use PRE-POWDERED Spices are so inconsistent in flavor.
WE make a Cinnamon Sugar Donut Twist which is deep fried Donut and ONLY use MACE and IT has NO effect and NOT a Complaint of a taste problem so I'm NOT certain why YOUR attempt with MACE was a Failure. With Mace being so similar to Nutmeg ALL the test would NUTMEG would also be similar in nature then a Failure I would Think ?
ONLY MY observation, and Finding from use of MACE?
I Do NOT think the Top Bakeries in the World would be using MACE if it was that WRONG ? ? ?

OK, today was left-overs day. The Mace over-dominates, but there is a presence of the note as well. I'll start working on fitting Mace into my Recipe #16, albeit at a well reduced quantity, for one last go at it.

The Mace here stands at only 40% of my Recipe #15. Hope is initially high for this one to deliver just enough of the note whereby to be the one that finally hits pay-dirt. But one never knows until after it's been cooked and eaten.

It goes well sprinkled on coffee, if you need to use it up. I just tried a pinch in coffee with cream, and it is actually rather tasty. Thanks!!!

I can detect the peppery nature of Mace in my coffee. Next up is nutmeg coffee.

Nutmeg smells far better. No hint of in your face pepperiness.
After having the spicy and peppery coffee with Mace, my Nutmeg coffee is not developing any noticeable spice flavor at all when at the same pinch level as for Mace. Far more subtle. But my nutmeg is old, and has likely lost much of whatever nature it was intended to have.
There are actually many websites which parrot that Mace is less spicy and more subtle tasting than Nutmeg. I can assure you that all of these sources do not have a clue.
I can see now where Nutmeg must be used at much higher levels than for Mace.

Could it be that Coriander Seed is actually a substitute for Mace in KFC, rather than being a substitute for Celery Seed? Mace is expensive by comparison. Both together in one recipe may be a mistake.
In my Recipe #15 I made the big mistake of amplifying the quantities of both of these.

It may be that whereas the heat of cooking washes out much of the spicy heat nature of B&W Peppers, it does not do so for Mace. Mace is Peppery hot.
