We know it contains 25 ounces. We surmise that due to a court settlement it can have only 5 spices beyond Salt, Pepper, and MSG
Given these constraints, what would you guess might be in it, summing to 25 ounces.
My first guess:
MSG, 8 ounces Salt, 2 ounces White Pepper, 6.375 ounces Black Pepper, 4 ounces Coriander, 1.125 ounces Ginger, 1.125 ounces Sage, 1.125 ounces Allspice (or) Star-Anise, 0.75 ounces Marjoram 0.5 ounces

I thought it was Sugar and Spice and Everything Nice.
White Pepper, Black Pepper, Coriander, Ginger, Cinnamon, Dill, Tarragon, Rosemary, Thyme, Parsley, Sage, Chili Powder, Vegetable Seasoning
Poultry Season, Chili Spice, Style Spices
I would guess they are using a mix which has multiple spices. Which may or may not circumvent legal issue's. I Do Not think KFC New Age Corporation, gives a crap about Marion Kay at this Point ( Kordell and company does NOT have the FIGHT Bill S ) I DO NOT blame Kordell as they have a company they cannot jeopardize
Remember if your not poking a Bear in the Eye it usually does not eat you alive. KFC New Age Corporation can Always say its not the same as the original, and unless they are sued to disclose the Ingredients which WILL NOT happen in the USA. They will say what they want, and they have a Bank Roll with Press releases and Media Relations
McDonalds Put out a Tweet On Aug 31, 2021 they are returning a Old McD Item and people are going NUTS trying to figure out what it is and Now McD tweeted after millions commented OH PIZZA. McD says NO its NOT PIZZA NOW there is a frenzy of other guesses. LOOK AT THE FREE TRACTION and FREE Media attention now its getting.

Did some people NOT Do a Reverse Engineering on the 99X ?
I'm NOT sure why they would have done the 99X when SOME PEOPLE have the Original Bags of the OLD KFC Spice. They could have reverse engineered the Old Bag of KFC NEW AGE Spice and then did a fact finding like Bill S from Marion Kay did for CHS.
Yes reverse engineering 99X may help show what's in the 99X and give some items which will be helpful. I think the Old samples should be tested.

After a bit more thought, I offer this 25 ounce alternative:
MSG, 7 ounces White Pepper, 6.25 ounces Black Pepper, 4 ounces Salt, 2.75 ounces Sage, 1.250 ounces Coriander, 1.125 ounces Ginger, 1.125 ounces Allspice (or) Star-Anise, 1 ounce Marjoram 0.5 ounces
Add to 3 Lbs. Salt and 25 Lbs. Flour ------------------------------------------------------------
Breaking this down for 200 grams of flour yields:
200.0g. Cake Flour 25.375g. Salt 3.50g. MSG 3.125g. White Pepper 2.00g. Black Pepper (half fine and half coarse ground) 0.625g. Sage 0.5625g. Coriander 0.5625g. Ginger 0.50g. Allspice (or) Star-Anise 0.25g. Marjoram

The rounded version of the above for 200 grams of flour:
200 g. Cake Flour 25.4g. Salt 3.50g. MSG 3.13g. White Pepper 2.00g. Black Pepper (half fine and half coarse ground) 0.63g. Sage 0.56g. Coriander 0.56g. Ginger 0.50g. Allspice (or) Star-Anise 0.25g. Marjoram

Many claim that 99-X (meaning here the real 99-X, and not a mere guesswork clone attempt) will get you roughly about 90% of the way to KFC_OR. Could this be done with only 5 herbs/spices instead of 11?

If you could use only 5 herbs/spices beyond salt, black and white pepper, and MSG, what 5 would you choose?

I never count Salt and Pepper as a item as you state beyond salt, black and white pepper, and MSG
Based on a principle that 11 cannot be divided equal you are left with one of 2 Bags a 5 item or a 6 item Bag
Mace/Nutmeg one and the same in my mind BUT Mace was the First Horse across the line in 1939 Cumin / Coriander Vegetable Flakes with Garlic and Onion Sage / Savory Herb Blend / Italian Seasoning Red Pepper and Cayenne Blend or a Ketchup / Catchup Spice

If you have Marion Kay 99-X, then the correct quantity of it to add to 200 grams of flour is:
200 grams flour 24 grams salt 12.5 grams 99-X
A 25 ounce container will make 56 x 200 grams of flour batches. If you fry a family's worth of chicken once a week it will last you more than a year. That's a bargain considering its price.
