I thought I had cook session #12 pegged down, but then (per my usual habit) I got back into playing games with the ingredients and came up with this:

Back to compliance with the 740 gram bag. (740 grams = 26.1 Ounces) Presumptions: 1) Salt is a mineral, and therefore simply can't be one of the 11 H&S. 2) Garlic was not one of the original 11 H&S, but came later. 3) deepfriednew101 says Sage must follow Pepper, and @eastfrisian says Ginger must follow Pepper, so I set them both equal in weight. 4) In the surrealistic 1960's TV commercial where a group of women capture and then torture Colonel Sanders into revealing Savory to be one of the original H&S, he was lying to them. 5) MSG was never counted among the 11 H&S. Just as for salt, it is a mineral. If I added correctly, everything from MSG on down (including Garlic Powder) sums to 13.05 grams, which scales to 26.1 ounces, or 740 grams for 25 Lbs. of flour.

21 Lbs of Seasoned Flour can coat 224 pieces of chicken
NOW occasionally some places have mixed 1.5 KG of Spices into 5 kg of Flour NOT RECOMMENDED BUT IT HAPPENS. BUT MAKES THE BEST DAM CHICKEN

the smaller Bag sizes are for smaller location or the larger stores can order also if they want to MIX smaller Batches . The amount of chicken coated is also accurate.

deepfriednew101, based upon what you have revealed above, KFC adds 2 x 740 gram (1.63 Lb.) bags of H&S to 25 Lbs. (11.34 Kg.) of Flour. Would that be correct? If so, then we should all be targeting the addition of 26.2 grams of "H&S plus MSG" to 200 grams of Cake Flour. Correct?

Adding 13 extra grams of MSG converts a 13 grams in 200 grams of flour recipe into a 26 grams in 200 grams of flour recipe. Problem solved.

Some ingredients simply can't be doubled, or even increased much at all. Such as:
Salt Black and White Pepper Star-Anise
And some others become overbearing at some increased level not much above common 13 grams in 200 grams of flour levels. Such as:
Oregano Cayenne Allspice Cumin Cardamom
And the rest all eventually become negatives as opposed to positives if some quantity threshold is breached.

With credit due to someone on another forum, an Australian Spice Mix called "Chookies Fiesta Fried Chicken Spice Blend" was found to be essentially the real deal of cloning KFC_OR when added at 50 grams into 200 grams of flour. The package says to add 5 parts flour and 1 part Chookies, which for 200 grams of flour means 40 grams of Chookies. Chookies contains both Salt and H&S. I believe it is fair to presume 27 grams of Salt for 200 grams of flour. Therefore: 40 - 27 = 13 grams Chookies complies with the 26 ounce or 740 gram bag added singly to 25 Lbs. of flour. At 50 grams, the guy/gal who declared it to be spot on when used at that level used what represents 50/40 x 13 = 16.25 grams. That's mighty close to the 32 ounce bag. Perhaps we should all be targeting 16 grams into 200 grams of flour in compliance with a 32 ounce bag. When Chookies is added at 50 grams that means everything is uniformly increased.
Salt goes from 27 grams to 33.75 grams, for example. I used to add 34 grams of salt to 200 grams of flour back when I first launched my quest to clone.... Then at my Wife's urging I slowly worked it down to 28 grams. She would be happy at 27 grams, as she still complains at 28 grams.

Double the 26 ounce bag: I may give this one a try. I need to settle in my own mind whether it is necessary to go beyond the 26 or 32 ounce bag criteria whereby to unveil the full song note.

Significantly improved recipe using the 2 x 740 gram bag model. Ingredients from MSG down sum to 26.1 grams. 11340 grams/200 grams x 26.1 grams = 1479.87 grams 1479.87 grams/2 bags = 739.94 grams per bag
