As promised my take on the results from my latest cook as posted above: Taste: I am coming around to the fact we need more H&S. Across the board the flavor profile needs to pop more. I get the 26 oz bag but they have to be adding concentrated flavoring. Perhaps before the 26 ounce bag there was a 40 ounce bag, and then a 32 ounce bag: Images copied from a link provided by Ken on the other KFC forum. The photo when you look at the corners of the container has colored the cardboard redish / orange and other photo from that same time period showed more red. Deprovo had posted this photo on Colonel Website and he and others who saw the bag said it was RED ? CHS Did agree with CHS on the Radio that the chicken was a rose red color BUT it did NOT take off like the Golden Brown term The other classic Problem New Age Corporation complained about was the OIL OIL OIL. It was a major issue with franchises and the Corporation when they went away from the Beef Tallow and Beef tallow blend the Hydronated Vegetable oil turned a Dark color and flavor turned much quicker then the Original Fat and lard. Franchises complained the OIL cost was more then 35% increase to the cost

The 40OZ Bag also list the Herb and Spice, MSG, Salt, Garlic Powder.
Back in the time period the Bag was Labels it was By highest weigh item to lowest which has been standard for decades and decades

Sorry I can't see it. But is there any dating involved in this so was it 40oz then 30oz now 26oz?
Reason I ask is I want to believe that using concentrated extracts allows them to reduce over all weight. I know others state they get a strong note from 13g in 200g flour. I just don't.

Also says manufactured by McCormick's. I tend to use mostly McCormick spices so that's a bonus. Those that say getting MK and others to specifically have enough flavor loss ground there

Assuming that 40oz went into 25lbs = 40g into 400g or 10%. My 13g into 200g was 6.5%.
I'm thinking I may skip the test of 13g of mine into 150g and move that to 13g into 125g to start. And then reduce flour from there. I may go the chicken wing route as suggested could do a couple tests at once without a ton of waste

The 40 OZ bag was packaged by McCormick but if you look at the other bag it was produced by Griffith Laboratories
so Both companies have the Herb and Spice Blend if they can package two different items which contain Herb and Spice
the 40OZ bag is spices the other bag is Crispy but they are both for the KFC chicken LOL

i would keep the mix simple 100g Flour 16g Herb and Spice and what ever amount of salt but working on the 100g of flour is a easy way to work and it will coat a small amount of wings or 150g Flour to 24g spice you get the easy math
Mix everything in a Ziploc bag and easy squish flour to wing and you can use the small amount of flour seasoning easy and less fight it a small bowl

The 32 Oz. ( 2 Lb.) bag has a lot code on the bottom. Lot codes often contain a date, and if you know the code you will often know both the lot number and the mfg date.

many 40oz Bags date back to the 1970's But the Crispy Chicken was later in the Time frame of the 70's
Also Not all the items tested in the early 1970's were in other countries until years later
