back to the Christmas Spice mix Silver I have a toss up which is a Better Spice mix the Christmas or the Sweet 16 Mix ?
It's a very close call between this one and my "Recipe #17", but this may actually be my best recipe so far:
200 g. Pastry Flour (or) 50:50 Cake & AP Flour 29.0g. Salt 7.50g. MSG 4.00g. Black Pepper (Half Fine, Half Coarse) 2.00g. White Pepper (fine) 1.50g. Coriander Seed 1.25g. Ginger 0.75g. Sage 0.50g. Anise Seed 0.30g. Allspice 0.30g. Mace 0.20g. Cayenne Pepper 0.15g. Clove 0.15g. Thyme 0.15g. Summer Savory 0.15g. Marjoram 0.15g. Garlic Powder

I like the Recipe it has what has merit and Aroma
the Last recipe are Great Sweet 16 and Christmas
I have suggestions that I think need changing BUT just thinking at this Point

It looks Good I would use the Pepper Type I messaged you in Private Currently on a Venture of the Highest Qualities of Spices Possible we just got boxes from Amazon of items that were used in 1930's Highest Quality spice. The Boxes received over Christmas are $ 100.00 and $100.00 worth. to test against lower quality items or see if its a waste of Cash. Finding spices and herbs THAT DO NOT have fillers from the stem are hard to find. low quality spices and herbs DO NOT give the same flavor as a High Quality item The below photo's are the Brand we are using and Compared to ANY OR ALL other brands the amount of EXTRA SPICE NEEDED IS CRAZY its NO comparison The Sage We are having a hard time to Gauge as it is so powerful using a quart of teaspoon fresh crushed is SO powerful its unreal

Another review of recipe "Silver Dec 28 2022". I brined 2 drums, 2 wings, and 2 thighs in 3.5 cups water, 2 tsp kosher salt, 2 tsp MSG, 1 tsp poultry seasoning, 1 tsp sugar, for 4 days. It was the best KFC recipe copy yet. The next day taste test convinced me of that. The small bones and knuckles were soft and edible just as real KFC is/was. Overall, it was indistinguishable from any good KFC i've eaten in 55 yrs. imo. I really don't see how it can be improved in all honesty! Its an exact copy, imo. cfc
