Update: If you want to bring the note of KFC OR to the 'Short Christmas Story' recipe, additionally add 1.50 grams of finely ground Coriander Seed.

We mixed up the Recipe and Did a side by side test
We found the 1st Mix or Mix A to be a good mix
BUT our 2nd Mix or Mix B was Drastic difference with FRESH items Whole which we Ground.
We Did not use Coriander and we hit a aroma which was Great BUT the Taste was ALMOST over powering
It our 2nd Mix or MIX B we were SHOCKED in the DIFFERENCE and the AROMA was unreal PLEASE NOTE we DID NOT use Coriander in either mix and we were NOT missing a NOTE in the 2nd Mix or called Mix B

I'm very confused. Please re-phrase this. As I'm understanding it now, mix A is the Short Christmas Story recipe straight up, and mix B (which was intended to be Mix A plus Coriander Seed, did not receive any Coriander, but rather it received fresh ground items instead of off the shelf or jar items. And with fresh ground ingredients it became overpowering, but with plain old standard off the shelf or out of the jar ingredients it was a "good mix", sans for lacking the note.
Coriander Seed is intended to be the magic ingredient which will bring forth the note. Therefore I suggest trying Mix A again (using standard off the shelf ingredients), but "also" add 1.50 grams of Coriander to it. If it is overpowering that way instead of being on the money, drop the Coriander to 1.25 grams.

Mix A is your recipe like you printed it NO changes
Mix B was FRESH HERBS, SPICES, PEPPER, ETC<ETC NO coriander The fresh items Ground Fresh with the same amount values in Mix A was over powering with Flavor
BOTH were Great to Eat Mix B was much Better with the Fresh Ground items

To me "overpowering" means being cloying or off in some way. A better word might be "bursting". As in: "Bursting with flavor."

If the final version of "A Christmas Short Story" as seen above fails to evolve sufficient of the 'note' of KFC OR, try replacing it with a longer version of "A Christmas Short Story" as follows:
200.g. Pastry Flour 29.0g. Salt 10.0g. MSG 4.50g. Black Pepper (Half Fine, Half Coarse) 3.00g. White Pepper 1.50g. Coriander Seed 1.25g. Summer Savory 1.25g. Ginger 0.50g. Anise Seed 0.30g. Mace 0.25g. Clove 0.15g. Nutmeg 0.10g. Cassia Cinnamon
Where "Short" (as always) means short of 11 H&S...

The theory here being 'roughly' that (for deep fried chicken seasoning purposes, at least):
0.25g. Clove + 0.15g. Nutmeg + 0.10g. Cassia Cinnamon = 1.25g. Allspice
(albeit with the left hand side of the "equals sign" being potentially superior to the right hand side, and with testing required whereby to verify)

I will agree with you Bursting with flavor would have been a better term the 2nd or B Mix which was made with the WHOLE spices NOT Pre-Ground were higher then Bursting with Flavor they were ALMOST to overpowering.
I will Mix the Christmas Spice Mix again as it was Good and Use Coriander and Real Whole Ingredients
I will Mix Version A with Pre Ground Spices BUT ONLY Organic and Regional spice which are From Countries who are still using OLD methods for Harvesting Spices and NON GMO type Fast growth Spices and Herbs (when TC32 TC34 versions were around they were listing Countries and Origin of Spices) Bill S. Marion K said KFC NEW AGE had a BIG ISSUE there was NOT enough Tellicherry Black Pepper for ALL there production. C.H.S complained when K.F.C. was NOT using a Imported Ginger Imported and Franchiser ALL have agreed that they had to ADD extra Ginger Until they K.F.C New Age changed the supplier back to a Pure Imported Ginger.
I will USE the BEST Quality Spices and I will Compare it to run of the Mill SPICES.
I have been jumping up and DOWN now for a long time that Spice Quality is gone down from 1930'S Pure Spices and since Covid the Spice trade has also taken hits. Costco has changed Suppliers 3 times in last years BECASUE they cannot get enough supplies and the Quality is all over the place.
Last summer when we needed Pickling Spices for Marinade and Sauce we had to Drive to the Only supplier in Calgary Canadian Wholesale who Had the ONLY and I mean ONLY containers in wholesale shelves.
Yesterday my Head Butcher and I sat down and calculated spice use for the month that we used for smoking meats and sausage and ALL the Catering and our calculation worked out to a 5 Gallon Pail of Spices per WEEK.
back to the Christmas Spice mix Silver I have a toss up which is a Better Spice mix the Christmas or the Sweet 16 Mix ?
