KFC Corporation has disclosed this information to the Ukraine Government when they were given approval to Have KFC in the Ukraine.
The List were to be in a order and sequence from Highest Amount to lowest amount. I was told that KFC did specify that MSG can be listed as the Highest used Item in some instances with pre packaged items

I want People to understand the volume of Flour to Seasoning used in KFC 2021 I DO NOT care what others say or comment this is real use AMOUNTS
5kg Flour 11 Lbs. Flour 1kg Seasoning 2.2 Lbs. Seasoning 11 Herbs and Spices 159g Milk and Egg Powder 13.2 Lbs. Total plus 159 g Milk / Egg Powder 5 / 1 Ratio Flour / Seasoning or 20%
8kg Flour 17.6 Lbs. Flour 1.5kg Seasoning 3.3 Lbs. Seasoning 11 Herbs and Spices 200 G Milk and Egg Powder 21 Lbs. plus 200g milk / Egg powder 5.3 / 1 Ratio Flour to Seasoning .18%
NOW occasionally some places have mixed 1.5 KG of Spices into 5 kg of Flour NOT RECOMMENDED BUT IT HAPPENS

This (eBay link below) is the spice mix bag for Extra Crispy. It weighs 587 grams (20.7 ounces). The instructions say to add it to 25 pounds of flour. 25 pounds = 11,340 grams of flour 587/11,340 x 200 = 10.35 grams of spice mix in 200 grams of flour. I don't think there can be any remaining argument that very little spice is used in the current KFC fried chicken.

I agree they don't use much spice and using extract to make stronger.
The old recipe was much higher in Real spices. %

I don't have any extracts at my disposal, but as I've been progressively reducing the spices and increasing the salt and/or MSG my fried chicken has become (to my pallet) more like current KFC in flavor. I'm convinced that 13 grams of spices plus MSG added to 200 grams of flour is totally adequate, sans perhaps for a need for (ever?) more MSG.
I'd say the taste profile and intensity can both likely be achieved with as little as about 9-10 grams of herbs/spices including pepper (but not including flour, salt, or sugar) plus about 3-4 grams of MSG. But now I'm interested in experimenting with as much as 10g. to 15g. (and more?) of MSG.
Within the 9-10 grams of H&S, I feel that about 5.25 grams of this needs to be a mix of white and black peppers, with white predominating. That leaves only about 3.75 to 4.75 grams for the total sum of all of the remaining ~10 herbs and spices (again not including flour, salt, sugar).

You are correct with the Math BUT something need to be also looked at with this calculation that make this Bag much lower then 13% or 10.35% Spices.
The Extra Crispy Has more items then the 11 Herbs and Spices Bags. There are 7 items listed before the Spice? and the 7 Items All would Contain More individual amounts then the Spice in order of amount value of the 10 Items
So if we did a value assumption that All the items were equal it would make the value of each item 58.7g and also look at other bags which list the 2 last items typically at 2% would minus out 23.5g of Turmeric and Annatto.
563.5 / 10 + 56.3g each approximate
so lets say that we calculated 4 x 56.3g = 225g in 11,340g of flour
BUT this is my own number evaluation of the Spice amount If my evaluation is off it would put it much lower then 10% Spice per Flour mix

Sodium Bicarbonate + Sodium Aluminum Phosphate = double acting baking powder
flour plus cornstarch plus double acting baking powder = low protein self rising flour
Turmeric and Annatto are added for their yellow color. Or rather, extracts of these, which I tentatively guess strip out much of the flavor of these two colorants while retaining the yellowing.
All of this plus the salt as listed in the ETC seasoning bag leave even less room for actual herbs and spices than I considered above.
