MSG was used in the Kentucky Fried Chicken Original Flour Blend but was NOT one of the 11 Spices & Herbs. Accent was the Brand that was used by Colonel and Claudia Sanders. Accent also had a Lemon Flavored Season.
HOW MUCH SHOULD YOU USE? For a Total Amount of Meat, Poultry, Seafood, or Vegetable Weighting Add This Much Ac'cent
Tablespoon Tbsp Oz
5lbs 1/2 Tbsp 1/4 oz
10lbs 1 Tbsp 1/2 oz
25lbs 2 1/2 Tbsp 1 1/4 oz
50lbs 5 Tbsp 2 1/2 oz
100lbs 10Tbsp 5 oz
For a Total Amount of Casseroles, Salad, Sause's, Soups or Gravy Measuring Add This Much Ac'cent Tablespoon Tbsp Oz
1 gal. 1 Tbsp 1/2 oz
2 1/2 gal 2 1/2 Tbsp 1 1/4 oz
5 gal 5 Tbsp 2 1/2 oz
7 1/2 gal. 7 1/2 Tbsp 3 1/4 oz
10 gal. 10 Tbsp 5 oz
Add Ac'cent with other required seasoning.
2 level Tablespoons = 1 oz
The amounts were provided by Ac'cent to users and this was there instructions from the original shipment and was printed on Barrels also

I personally use Ac'cent as my MSG of choice and it was the original MSG BUT I use other brands also in general when mixing msg use between 1 tsp - 1 1/5 teaspoon in my mixed off flour for a small batch The lowest volume I have used was 3/4 tsp to 1 cup of flour when CHS added the MSG to the Lug as the 12 item in KFC Chicken at Cumberland lake. He added 2 handfuls of MSG back in 1955 era a handful was determined for most powders as a 1/2 cup in 1955 in every ingredient list as following principle rules of label laws the first ingredient is typically salt or MSG the other items so when my 3 item is XYZ and it weights 3grams the minimal Salt or MSG is higher then 3 grams to follow the ingredient Laws that the First 2 items would be equal to or greater then the 3rd item somedays I go with principle over exact measurements there are many recipes now that I use equal parts of salt and MSG when dealing with small batches and never had a issue with flavor as for MSG and people having issues with MSG in foods ask them this question Do they eat Campbell's Soup, Kraft Macaroni, Dorito's, or potatoes chips if they say yes and they Do Not get sick from those 4 items they cannot be toxic to msg as ALL 4 those items have been known to use the highest volumes of MSG in food industry and far more MSG in any Chinese food dish typically This is from the 1960 Ac'cent with Lemon which was used for Brines and Butcher use more then other items

deepfriednew101, would 1 TBSP of MSG (~12 grams) in 1-3/4 cups of flour (~200 grams) be considered excessive? The most I've used is 10 grams, and I'm thinking of stepping up to 12 grams.

I have only had 1 time where excessive MSG caused a harsh issue and it was with a heavy amount in coffee brewing.
Now some would Say WTF MSG in coffee brewing ?
we add small amounts of Salt to coffee grounds before brewing it cuts the bitterness and make coffee a smoother taste if you have never tried it try adding salt to the coffee ground.
I have NOT found a amount that was to high in the MSG, we add MSG to the the spices and herbs, and shake the combination continually prior to use.
If you look at the principle of New Age KFC the MSG is mixed into the Spice and Herb Mix bags. In many samples KFC shows that Salt is added to the flour and then a separate bag of Herb and Spice and then a Milk/Egg Powder.
Flour / Spice / salt / milk & egg powder
my answer to a general rule of MSG is if the second and third item are 10grams
salt 11 grams or more Msg 11 grams or more x, y, z item 10 grams
msg 11 grams or more salt 11 grams or more x, y, z item 10 grams
remember the ingredient list show value per item and if it shows herb and spice as a mix then one has to consider that if the total of ALL spices added together were as a example 26grams then the salt and MSG would be more then 26grams but in some stated they use a highest single item in the mix as a gauge so test your recipes as to what works ?
If you find a amount that is to much let everyone know. I have not found a amount to High and us Uncle Roger would say HIYA MSG is the King of flavor

I understand that People are looking at MSG and Super MSG ways
I need to ask why and for what purpose except using less MSG.
As for 1939 Receipt the Original there was NO MSG and the MSG was only incorporated in 1955/1956.
in 1949 when MSG was re-introduced to the American shores, it was ALL taken by Food Processors first IE: Campbell's, Kraft, ETC, until Ac'cent introduced the home table shaker retail item.
There was NO MSG Plus back in the Time period. it was sold as Pure MSG, or MSG with Lemon when Ac'cent introduced it.
So as for using the MSG for a OR Recipe of 1939 No MSG is required and the chicken tasted different even CHS says so?
The 1955/1956 12th item two Handful of Element (MSG) was the Best Chicken CHS ever had.
So the question in my mind is ONLY 1 thing possible CHS added 2 Handfuls of MSG to most likely 10 LBS of Flour, Spices and Herbs
I would spend more time on how much is Two handfuls of MSG in 10 LBS of Flour?
