We fried only 3 mixed pieces at a time in our ~30 year old Dazey Model # 2250 combination deep fryer and crock-pot, set at 325 degrees F. on the dial, and cooked each load for precisely a timed 13-1/2 minutes. This really does the trick with the old Dazey. This is an open to the air deep fryer. No pressure. All pieces were perfectly done to the bone, tender, and juicy. And the chicken had the desired look to accompany the note.
The two previous times before this when we used the Dazey we did 13 minutes at 325 degrees, which left a hint of pink on a few thigh bones, and 14 minutes at 325 degrees, which both over-darkened the chicken and started drying it out a bit. 13.5 minutes is the ticket for our aging deep fryer.
The secret to no-stick chicken is to submerge each piece ~2/3 deep in oil by hand and then let go of it. Previously when we had carefully arranged and organized it in the basket and then sent the basket down into the oil it often stuck to the basket (and sometimes appreciably). By dropping it into the basket after partially submerging, it did not stick sans for only 1 piece that partially stuck.

We are also really sold on the added benefit of the dextrose and the maltodextrin. It's hard to qualify (let alone quantify) it, but it is simply better with it than without it.

I'll be trying this standard MSG loaded recipe later today: I know many have seen this Calvin King so called KFC recipe when he quit KFC. Lemon Pepper was used NOT Orange just observation and also Lemon Ac'cent was also a item in 1955 the lemon extract was more available then the Lemon Just observation Salt, pepper, basil, parsley, chili powder, lemon pepper, thyme, sage, onion powder, garlic powder

Great Job what made you decide on Orange Zest, and NOT Lemon Zest ? Orange Zest was quite a bit less expensive.
