The husband and wife team of 'Food Theory' said 99-X only began to taste more like KFC OR after they jumped up the quantity and then finally added citric acid to it. No quantities were ever mentioned for the zinging or the citric acid, rendering their YouTube video on this pretty much useless. Where they put the citric acid was left vague as well. Did they add it to the oil, the wash, or the seasoning mix itself?

I still think that adding both Baking Powder and Cream Of Tartar to the seasoned flour mixture (at about a teaspoon each) works flavor magic, and works well better than Citric Acid ever did for me.

DFN101. The mid 70’s 99x had about 2.6oz of salt. Testing of modern 99x shows more like 5.75oz of salt. Container weight the same. So something changed and so far it looks like over all pepper amount may have stayed consistent.
If the ratio of herbs and spices were reduced and pepper stayed basically the same, salt went up. You could see why adding more 99x may not be the answer. What I would try is adding some of MK’s poultry seasoning to 99x first. To see if that helped

Glen stated that boosting the quantity of 99-X helped the flavor. But he was also vague on this. Ken seems to think the sweet spot is 19 grams if I'm understanding him correctly. I'd probably go with 16 grams in 200 grams of flour straight away, because KFC bags are now 32 ounces.
Edit: Adding 16 grams would be a 28% zing.

That might. I certainly would not double it up Just did a double check. I would agree to keep pepper and salt inline. 16g is likely the sweet spot as per Silver
