Josh Ozersky cook's 99-x Seasoning
Conversation lead 12 people to ALL watch the video of Josh Ozersky Ultimate Fried Chicken Cooking Video which is 8 years Old.
Everyone Noted that He used what appears to be 2 cups of flour in the Glass Bowl.
The amount of Seasoning is STAGERING Heavy.
The bowl of flour has seasoning in it, at which point He Adds More seasoning plus adds 99-x to the Egg Warsh
a photo breakdown is needed to show HOW much Seasoning Josh Added to 2 cups BUT on review Many are suggesting 12 - 14 Tablespoons on a Heavy amount and 10 - 12 Tablespoons Total on a lighter Amount FOR 2 - 2.5 Cups of Flour.
3 different Times seasoning was added
1) Flour and seasoning first 2) More seasoning to the Flour after the 1st was stirred 3) Added 99-x to the Egg Wash

Over 18 a long time ago.
Old enough to have been traveling with C.H.S. and Claudia on Missions and cooking Original Old style Chicken with C.H.S.
I have crapped out more Original Chicken then the NEW AGE YOU have ate.
What's more important is that YOU Do Not follow Old logic and the Old advice Posted by MANY
As a example for ALL is 99-x has ANY resemblance close to a KFC seasoning why are so many having to use 2 - 3 times the Amount shown on the 99-x Container.
I would suggest that Everyone increase the amount of seasoning mixed to Flour First Many suggested 1 oz per 1Lbs for Flour which is NEW AGE advice Franchises used.
WHY Not try 1.5 or 2 oz make a Zinger as referenced in OLD MANUALS
experience why Original Chicken taste like and Take C.H.S. advice many could cook chicken Like He can they just need to use MORE Seasoning 1957 Interview

Too bad Josh Ozersky passed away in 2015, as it would have been nice to hear directly from him as to the amounts of flour and 99-X he used.

I'm fairly certain that Ken on the other forum stated once that 19 grams of 99-X in 200 grams of flour hits the sweet spot. That would potentially infer that early on the proverbial 'bag' was 40 ounces.
But 2X would mean 25 grams of 99-X in 200 grams of flour, and 3X would mean 37.5 grams of 99-X in 200 grams of flour.

I believe @11serbs is on record as stating that 12.5 grams of 99-X in 200 grams of flour tastes down right good, and when he's tried boosting it the results went down hill.
