They used the Term Secret recipe with 17 herbs and spice or 14 spices ETC
C.H.S. WAS NOT NOT NOT the First person to use the TERM secret recipe with so many ingredients
Durkee's Dressing used it and Others
11 was His amount of the Spices and Herbs most common used in the Panty

11 was His amount of the Spices and Herbs most common used in the Panty Were there additional Herbs and/or Spices (beyond the pantry common 11) which were not generally within an ordinary Southern USA households pantry? Plus were there non-Herb and/or non-Spice ingredients that are not seen on the seasoning bag labels.

Bought some Jamaican ginger yesterday. You NEED high quality ginger. I bet most of you are using dark brown, stale, toffee, sweet style ginger. and you claim to be serious about the recipe lol? "oh high quality ginger isn't needed!" if you think that you know nothing. It 100% is needed and is critical.
I too have been using this for alot of my recent cooks, but i'm going back to Jamaican because this stale brown stuff just aint cutting it.
I cannot stress enough what a huge difference Jamaican ginger made when i used it. Jamaican ginger and also Sogeri Wild ginger are the two best gingers i've used.
The type of ginger you need has to be hot, spicy, and AROMATIC! the regular dark brown stuff you get from grocery store isn't any of these things.

I have used Jamaican ginger, and it is superior. But ordering it was difficult. Quality could not be assured. So I went to the Mexican markets (Mexico supposedly grows the same ginger) and bought the whole dried ginger and grated them into a powder. Far superior to regular store bought ginger.

There is a company I think may be Canadian, call Cool Runnings (not the movie). They claim spices are from Jamaica and have ginger. It's not overly expensive, so I am going to grab some next time I'm out. Only one brand on Amazon.ca I have used and is Jamaican. It's been out of stock forever now

Walmart in Canada Carries some of the Cool Running items and Amazon.ca also Carries it.
Yes they purchase items direct from Jamacia I inquired with the Spice suppliers who Ship to Canada in Jamacia
Walmart's have limited items in Canada in the International Isle

Marionkay Ginger by default is from Jamaica. marionkay.com/product/ginger-ground/ Another high quality ginger i have found that appears to be high quality from the colour and also reviews is this one. iherb.com/pr/frontier-co-op-organic-ginger-root-4-09-oz-116-g/106582 that brand also has two gingers. One is a much more yellow colour and they describe it as "Aromatic and biting" the other one is your typical dark brown colour and they don't give it the "Aromatic & biting" label. The one with the yellow colour appears to have the same bright yellow colour that my Marionkay one had.
