I read that you have to toast fenugreek to get rid of the bitterness. Have you tried toasting it? Does it improve flavor and aroma, and get rid of the maple syrup flavor/odor?

I have toasted everything known to man. I have soaked everything known to man in 190 proof to make extracts. If CHS used mixes, that doesn't preclude him from making his own version of a mix rather than purchasing it from the market.

C.H.S. From Before the KFC Legendary 11 Spices and Herbs was mixing seasoning for Veggies and Harmony.
Even when K.F.C. New Age took control of the Ownership C.H.S. Had His Own area to Mix Spices and Herbs and Cook which was different than the KFC R&D Lab they had set up.
Massey would Steer Clear of C.H.S. when He was in the Head office and mixing working on His own thing.
WHY WAS C.H.S. allowed to have His own Area to work on the things He wanted to. He still Had 100% Control over Canada, Utah, Florida, UK as part of the Sale to Brown and Massey and Had full control to work on New items as Part of the Agreement and was ONLY a spokes person for the NEW AGE salary of $40,000.00
Remember this C.H.S. SOLD Brown and Massey a BBQ Franchise One year Prior to Selling them the K.F.C. which He mixed ALL the Spices and Herbs For.
C.H.S. also worked with McCormick in developing a Outdoor Eating Seasoning Box kit McCormick was already Mixing K.F.C. seasoning

And what pissed him off about the new "Extra Crispy" was that he had nothing to do with developing it. He insisted that KFC not attach his name or ownership of the recipe to him.
That comes to the point I've been researching. If CHS made his own flavoring mixes, then why was keeping the number of ingredients to "11" so crucial? What was special about the number 11?

A highly popular and many decades old gambling game involving a pair of dice (with all of this to avoid directly naming it, which might bring down some level of retribution) delivers an instant "win" if the player tosses the dice and they come up with either a 7 or an 11 on the first toss. It's popular when playing this game to hear the players yell out "Seven Come Eleven" when making their opening dice toss. No idea as to correlation, but it emphasizes that "11" was/is a well known winning number to strive for, so it seems to make sense to play upon emphasizing 11 from the perspective of delivering a winner of a recipe.
