I have had more Personal E-mails and Messages regarding Winston 100g Story and Does it Apply to the Recipe which is Hand Written to the C.H.S. Recipe in Possession.
YES the Recipe works for 11 Spices and Herbs to 100G when you Measure in Grams.
There is NO Spice or Herbs which uses .125g or Numbers that are NOT whole Numbers either
We Have spent 100 Hours accumulating weights of Spices Per Types of Grinds as Indicated in the Hand Written recipe and Cross referencing to to the Brands associated with USED in the ERA for the Recipe.
ANYONE also using Grams measurement Knows there is the PLUS - MINUS amount allowed in measurement which DO NOT throw off recipes.
We have tried the Recipe using ALL Ground Spices and NOT Flakes or Rubbed ETC ETC ETC. it does cause a Difference in Flavor Noticeable more in Deep Fried as the Oil Difference in the Spices
END result is That the recipe works to 100g or 1/2 Batch at 50g NO SALT added to the 11 Spices and Herbs
NOW IN REFERENCE to cross examining other NEW AGE K.F.C. Spices and Herbs from the Bags of K.F.C. Spices and Herbs NEW AGE which is a Powered Forum and HIGH in Extracts mixed with Salt and Starch's for ANTI clumping purpose also ONE could cross examine the amounts BUT WE DONT have the time or want to as it's the Original recipe which is important.
As for everyone SAYING BUT the old Packaging SAY this or THAT - MY COMMENT IS THEY followed Proper listing Laws for Label Process which DOES NOT mean M.S.G or Salt are the Highest Value THE OLD LAWS SAID they had to mandatory list the Items and IT WAS acceptable to LIST THEM FIRST and DID NOT follow the Highest Weight RULE and the LISTING of Mandatory item's OVER rules the weight and or the Alphabetical rules for Acceptable safe item's.
THE PROBLEM IS People are thinking the Label Laws were ALL the Same for Every country and Stayed the same FROM 1905 IT DID NOT and IT CHANGED.
Salt, and, M.S.G. even if they were the LOWEST weighted items in the MIX could be LEGALLY Listed FIRST under the Mandatory Label listed item and FDA or CFIA would have accepted the Label List as Properly Listed and Printed BUT IF YOU cross reference the LIST provided in the Laws for allergy and or Health guidelines the Rules are different also

Deepfried, My esteemed forum colleague, Could you please explain the relevancy of Winston to the quest for the original KFC recipe? I’m at sea why a pressure cooker inventor affect Colonels recipe. Did he arrive much later in the game or was he a crucial link in the development of the recipe? Also, do you add the anti foaming agent to your oil?
I notice that after I pressure fry, there is a lot of h2O content in the oil. Thereafter, it takes a lot of time to get the oil back up to ~320°. Do you wait to get back the temperature to 320 or so before you do the second batch? I assume fry sealing would not occur if the the oil is not dried first. That is when I start to see the foaming. Thanks

The Only relevance to the Original and the Winston Story is 100g Does work into the Winston story when I mix the Original recipe as written By C.H.S. when converted to Grams it does work out to 100g of the 11 Herbs and Spices also.
11 Herbs and Spices equals 100g plus or minus acceptable scale variable

Imagine caring about any Winston Shelton story. Show me the part where it reveals any spice or herb? If you have to rely on stories like that to figure out ratios you are never cracking it. I have figured out perfect ratios through trial and error. Same way C.H.S would have.

Chickman: If the Basic workout for the amounts it's way better then starting from NO Guess at All.
C.H.S. used Item's they had in the Home and the Family liked First so there was NO GUESS work.

For those who believe in the vials, my bottle of Celery Salt is as green as Sage and Summer Savory.
There are 3 vials that are green. Sage, Summer Savory, and Celery Salt.
Celery Salt is not just ground Celery Seed and Salt. It contains dried Celery leaves and stalks as well...

Celery Salt and Garlic Salt can be reversed whereby to make a second recipe derivation. And this derivation critically moves Garlic Powder to dead last in the weight pecking order, in compliance with Garlic Powder always appearing last on the bags.
