The presumption that Salt and MSG were not part of the 100 grams stems from a pervasive and collective bias that has kept us from unlocking the Winston Shelton mystery. Winston Shelton stated: “And when he got through, he told me it would all add up to 100 grams. Then he said I should take that and mix it with a certain amount of soft winter wheat flour and that would be it.”
A literal reading implies (to me at least) that ingredients such as Salt and MSG are to be included within the 100 grams, since adding the 100 grams to flour alone "would be it.". This approach opens new pathways to breaking the stagnation and resolving the mystery.
Where I may still have it wrong (as presented above) is that (again taking Winston fully literally) 20 grams is to be an herb, and 10 grams is to be a spice, so perhaps the 20 grams must be Basil (or Tarragon), and the 10 grams must be the Peppers. Something like this:
~360 grams Cake Flour (3 Level USA Cups)

50.0 grams Salt
20.0 grams Basil (or) Tarragon [1]
13.0 grams MSG
10.0 grams B&W Pepper [2]
2.50 grams Coriander [3]

I've recently cooked a recipe with 10 grams of Basil and found it to be neutral as a contributor. Perhaps at 20 grams it will evolve something that is positive in some way(s) as opposed to neutral.

But OTOH, if 20 grams of Basil is still neutral, and the effect of adding it is much the same as for not adding it, then the Winston Sheltonized recipe comes even closer to effectively being Recipe #17. |

Wow! 20 grams of Sweet Basil has almost as much Eugenol as 1 full gram of Clove. So Clove can be left out completely (in addition to Allspice). That frees up a spot for another ingredient, unless B&W Pepper are counted as 2 items instead of 1. Edit: That takes care of the "no Clove" matter, wherein Glen complained that Dustin's recipe tasted of Clove while he tasted zero Clove in KFC OR. |

Silver, could you you please give a reference to the Winston Shelton connection to the recipe. A cursory googling shows that he invented or improved upon the pressure fryer. Thanks!
Also, have your tried black cardomom? I went to. Nepalese restaurant and I first tasted it there within the curry sauce: very high in licorice taste.
Deep Fried, would the Colonel have been ordering his spices from a spice wholesaler in the old day: Or perhaps visited the nascent ethnic communities back then whether in the US or Canada.
Thus lending to the possibility of obtaining more exotic spices. But then, that would greatly increase the cost of production. He after all is a businessman at the end of the day.
