cman: The answer comes from Both Colonel and Claudia. The location they had in Corbin was a Gas station and the Spice Salesmen and delivery Men Stopped for Fuel and the Salesmen for the spice companies Sold C.H.S spice's But the Colonel was very true to Brands and having a consistent product. Claudia spoke about C.H.S. knew what to use when a shortage happen.
Did he have the chance to see many difference Spice's Yes. Remember the Pete Harmon Story He went to Pete Harmon Family General Style store in Salt lake City and Bought All the item's off a Shelf to make Pete H and his family and staff supper so at that cooking night ALL the item's were from a Grocery store to make the supper.

Great clues DeepFried! And, the fact that the story also comes from Claudia decreases the possibility that the story was concocted by PR.
Also, CHS was also then substituting the ingredients. The big question then is how specific the Ingredients were. Did the black peppers have to be Tellichery, ginger from Ceylon, etc.
If the spice salesman were traversing the country and passing by a country restaurant with a gas station, they couldn’t have been selling the rarest spices like Star anise back then. I would guess they are selling bulk spices to gain a commission.
Another question would be how much did the corporation that bought the recipe from CHS change the original recipe. I recall the CHS related story of his rejection of the gravy that tasted like glue. Was the country restaurant recipe the same as the franchised recipe.
It could be beneficial to see what spices were available then at Pete Harmons grocery.
