For example today I was focusing on tarragon. And what I noticed is an unfamiliar smell to it when cooking. Best I can describe citrus like heading towards a smell of lime. I have never smelt anything like this as it stood out. To me if tarragon was in the OR it would need to be low. I have never smelt this in KFC chicken.

My dried Tarragon doesn't taste much different from Basil. I must have some lousy Tarragon.

Dried variety from a new bottle I opened. Good quality company usually

This has a mild liquorice taste. But also had a hint of citrus too. Best I can describe. Mine didn’t taste at all like basil
I can see why a tarragon vinegar worked in the slaw though

For the coleslaw. I just fill a 1qt mason jar with Heinz distilled white vinegar, and place 1 bunch of FRESH tarragon. Then wait till the herbs have changed color from bright green to a more brown/green. Usually 2-4 weeks. Don’t use dry tarragon.
