Chickenman What's your opinion on Grace's Perfect Blend ? Does it come close to a KFC seasoned Flour or even 99x 99x had some kentucky aroma when i first used it but flavour was miss. Not overly impressed with it. Have not used Graces blend and don't plan to. I already got just about all the goodies secured My sense of smell/taste impeccable.

Chicken Powder is NOT a Herb or Spice
BUT it is a seasoning ?
and Chicken Powder is NO secret 11 Spice or Herb
It would NOT be in a VIAL but works GREAT in Brine ?

Hypothetically, If someone maintains that the main essence of the note comes from a blend of herbs, and another person positively maintains that only one herb is a sure thing, then does that mean that he is nowhere close to knowing the OR? If little is known, about the identity or importance of essential herbs, then is that person close to finding the OR? This is just a hypothetical, assuming that the herbs are essential to creating the note.

Like what else do you think it comes from?? do you not understand how incredibly aromatic herbs/spices are and the aromas they add to cooking? The oil, chicken, chicken fat, egg/milk also add to the note. All combined create the amazing Kentucky aroma. Herbs are also absolutely essential and a big part of the note lmao.. Sage being the key player. To even say "assuming herbs are essential to creating the note" you don't seem to have much understanding or knowledge about herbs/spices. You been doing this for how many years and still don't know herbs are crucial to the note?

One of the MAIN reason that Main HOME cooks cannot get the NOTE* AROMA from the Chicken is that they Don't cook enough Chicken continually in the FAT.
When NEW KFC are OPEN they Do Not have the Heavy NOTE* AROMA until after they cook one or two days, and The Fat/Oil Takes on the Aroma,
ANY one who has Attended A Indian Medicine Healing of Smudge KNOWS that SAGE as used by the Indians while Smudge gives off one of the Higher Aromatic which is also found while cooking with Sage even in a Stuffing or Dressing and while Making Sausage in a Butcher shop.
A simple Test Make wings with Four different Seasoned Flours
One with ONLY Herbs One with ONLY Spices One with ONLY Vegetables One with ONLY Seasoning like Chilli, BBQ Seasoning ETC
See which Gives the Highest NOTE* AROMA and Flavor ?

It's absolutely true what you are saying in that the used cooking oil contributes to the cooking note. But you still need the correct herb/spice recipe to flavour the oil the right way. The chicken fat definitely flavours the oil and adds to the cooking note the next time you cook. And cooking bone pieces adds a different cooking note to just frying breast pieces. Also, when oil is flavoured after 1 or two cooks, you will smell the note when just heating up the oil to temp the next time you are cooking.

Not filtering the Oil after the First one or two cooks allowing the Cracklin to season the Fat also will enhance the NOTE* AROMA
Filter the Oil after the Cracklin after you have cooked the second day or after you have Heated the Oil the second day to release the NOTE* AROMA from the Crackin BUT DO NOT BURN the crackin or the FAT take on the burned aspect in taste.
YES the Proper Herbs and Spices Vegetable and Seasoning make the other part of acquired NOTE* AROMA aand Flavor
