In the 4X scaled up version as Winston would have received the above recipe, Toasted Mustard Seed is in the 'forgotten' 13 gram slot. By then it was no longer an ingredient, so perhaps that's why CHS might have initially forgotten to include it while rattling off the recipe to Winston.

Please find a Tin of Toasted Yellow mustard Seed in 1930's'ish Era either in the Grocery or the Botanical Pharmacy
YOU WOULD HAVE NO BENIFIT to Toast Mustard Seed when you are Deep Frying the Recipe which is God to more then Toast the Mustard and other seasoning.
Which is Why C.H.S. also Knew more seasoning is required then Baking or other cooking methods the Oil absorbs % of the seasoning while its Browning in the First 3 minutes, and you loose that same % of Taste in Finished product that is why a more seasoned Breading helps keep the Flavor after full cook process and Resting.
There is NO ONE who talks about this effect of the Browning 3 Minutes Prior to Capping the Pressure cooker while the chicken Browns it also Locks the Flavor in But if to much is lost then the Flavor becomes a more Flour Only Fried chicken or a Over salted chicken taste.

I follow you in that deep frying should satisfy the Mustard toasting aspect.
But I'm not sure as to the MSG not being counted within the 100 grams (or 25 in this case). That said, how does this look:
