A bit necro, but around 24 seconds in he discusses the boat cruise he cooked for which is otherwhere well documented. On that cruise various documentation on this site lets us know what is where he first added MSG. And he added that to make his total 11 herbs and spices. Well, only 10 more to document from the man himself.
Then there is his thing with the "someone messed with the Tellicherry" thing. So down to 9. Been a while since I checked on the board.

He says that the flour is blended with the salt, then mixed with the seasoning of 11 Hs&Ss. He also says he had 10 when he added the 11th ingredient. This could have been MSG, but later he alludes to his "new" 11 Hs&Ss. If MSG is one of the 11, then this shows that his Hs&Ss aren't all herbs and spices, they way we look at it. To him, any seasoning fits his 11.

It is all about how he classified ingredients. Not how we would today. He uses herbs, spices, seasonings, elements. All those words to describe the 11 ingredients

All those words to describe the 11 ingredients How about Herbs, Spices, Extractive Oils (Extracts for short), Molecular Compounds, and Mineral Seasonings. There are most likely no Elements (as in individual Atomic level substances) involved.
