Should I tell the People who need to Think outside the Typical Thinking of ALL OLD copycat to PLEASE try
Mustard Seed and Ginger at some of the HIGHEST amounts under Pepper and Balance the Celery, Onion, Garlic salt to those 3 all being around 10g each 30g total
Please think about this ? Do You Think C.H.S. would have FORGOT a common common item of 13 % or a item that was being removed from recipes because of Allergies or less common used item ?
O.H. K.F.C. should I tell everyone ABOUT your Bulletin which was a Concern regarding the shortage of Ginger and Cinnamon that happen in the late 1970's when you switched to Locally sourced Ginger NOT Jamaican your experts just added 4oz of Jamaican Ginger to a 26oz existing bags. I know I will NOT tell everyone that was a 15% increase in the Ginger ? secret I won't tell anyone ?

400 grams Flour 32 grams Salt external Froom 100g Measurement
This is How I would Dream a Recipe ? to 100g below
20 grams B&W Pepper 15 grams Ginger 12 grams Brown/White Mustard Seed Blend (Coleman's) 10 grams Onion Salt 10 grams Garlic Salt 10 grams Celery Salt 5.5 grams Allspice 5.5 grams Sage 3 grams Coriander Seed 3 grams Anise Seed 3 grams Thyme 3 grams Marjoram
100 gram or 99x Total Spices and Herbs
100g of spices Does Not need to be used in the 2,3,4, Cup of Flour Mix it until the Seasoning meets your taste Flavor profile
2-4 Cups of Flour will usually make a Great Home Cooks size recipe 60g Seasoning 40g MSG and Salt
Mix the Pepper, Ginger, Mustard in a separate mixtures and sift it into the Flour
Then in separate Bow mix all the other Herbs and spices and sift into flour

So when taken as a midrange, should 60 grams of the above 100 gram mix be added to 3 cups of flour? Or 30 grams to 1-1/2 cups of flour (~200 grams)?

Adding 10 grams of Garlic Salt might mean adding anywhere between about 1.1 grams (McCormick) to 4.1 grams (Great Value Organic) of Garlic Powder.
And similar disparities may present themselves for Onion Salt and Celery Salt.

If adding 4 extra ounces of Ginger to each "bag" represents a 15% increase in Ginger, then the original weight of Ginger in the bag was 26.67 ounces.
Wherein 15% of 26.67 ounces = 4 ounces
Edit: It may be more logical to presume that if 4 ounces of Jamaican Ginger were originally in the "bag", then 4.6 ounces of non--Jamaican Ginger was the fix during the shortage period.
Wherein 4 x 1.15 = 4.6

OTOH, if the sum total of ingredients in the lug is on the order of 500 ounces, then 4 extra ounces of Ginger from that perspective would be only 0.8%.
4/500 x 100 = 0.8%

with this type of recipe and starting with 2 Cups of flour the 60g of seasoning which has Salts in it at approximately already 20g when you factor the salt aspect in the commercial salts flavored by Celery, onion, garlic the salting value of external salt might need to be lower then 40 for your salt preference of the potential degree of more salt being in your brand of seasoning salt.
we always sacrifice a few pieces of chicken to a cooking before we Do Mass cooking you test the first few chicken to see the flavor adjustments which may need to be completed first.
