Sometimes I meld for up to about 2 weeks, and sometimes I mix and deep fry. I also don't think there is any benefit in melding.

I don't deep fry that often, so when I do, I like the full aroma hit of freshly ground herbs and spices directly added to the flour, letting the flour catch and absorb the release directly and immediately. Indians always freshly grind their spices for each dish. They know what they're doing. This is an advantage we have in home settings over commercial restaurants or chains I would say.

who was it made available from in Canada ? It is not yet available to the general public. The kids and I had been keeping in touch with Karl for the past couple of years and he was kind enough to send some to me from a small shipment sent to Canada last week. sapidumfoods.com/shop/ is selling it in America though.

East Frisian when you make your recipes with lowest quality supermarket items How much extra love do you add into the meal preparation to make it robustness. Do you measure the Love to a 100Lbs recipe for accuracy?

Do you measure the Love to a 100Lbs recipe for accuracy? I don't know what low quality is in Canada or the US. Here it actually ain't bad, but cheap. We have many discount stores like LIDL and ALDI. We also have rather strict food laws I guess. So when I say low quality I am not talking US GMO spices with saw dust

Maybe I should have said 'cheapest' instead of 'lowest in quality'. But then again cheapest in some states is the lowest quality. Uh, anyway. The point is yes, I believe that when you have the proper ingredients, ratios and a powerful brine, it will get the job done. The note is not a diva.
One thing I find amusing is when folks that obviously have not cracked the recipe or are in the upper 90% discuss specific origins and qualities of spices with regards to the OR. Remember the old formulae that included Dalmatian Sage, Tahitian Vanilla, Turkish Bay Leaf in very detailed percentages? The recipe were utter crap. So instead of getting lost in speculation, spiceology and number games, I would rather focus on creating solid and robust recipes. This is my approach.

East Frisian I support your thoughts regarding the Origin of the spices. I will agree NOW it in 2023 region of souse can become a issue BUT more with Quality. I have this Principle which we have CAREFULLY observed Countries who still Hand Pick and forage the crops typically are very specific with High quality Spices as they are hand picked and Open air dried. (NOW if that Area is NOT been corrupt into adding fillers which may happen after the crops have been grown and sourced) HIGH QUALITY is typically received over many commercial quick grow operations ? Now if you Understand Packaging and Sales Distribution ALL Packaging companies will have a 15% overage rule for BULK orders Highest quality or lowest Quality they typically run a 15% overage. if the Order is Filled to 100% quality control standard that can leave potentially 150Lbs of spice to utilize. The packing company Typically will Run orders for Dollar stores and other 3rd Party company Private label packing from the Overage 15% because they typically can NOT reintroduce it to the Bulk Bins Due to contamination SO the Dollar store or Private label May get the HIGHEST quality Product for a cost recovery to the Packing Plant ONLY BUT the END customer gets a Great Deal. as a Prime Example Levi's Jeans and Wrangler Jeans Higher End Label Brands which are a wholesale cost to many Companies are $18.00 wholesale the Overage stock items sold to other Private Companies who want small quantities Get the Same Jean Minus the Branded Levi or Wrangler Name for $7.00 Same Principle applies to Almost all Processing Plants ETC. End Point If you find a High Quality at a $ store or other location stock up while you get a Great Deal. in the 1930 when Companies were importing the spics they Indicated region of source on the Cans two reason to show which were from other regions and TAX was extra on imported items IRS made it a easy way to ensure proper Tax was Paid in relevant to the amount of Saleable item from Out of country, easy distinguishable for TAX. Inventory of cans packaged had to weight imported amount. What do you find the cubeb pepper smell/taste like? does it have woody smell, and is it similar to regular black pepper?

Cross of Pepper and Allspice combo
This has a Ton of Aromatic we are going to use it this weekend NO Pepper No Allspice just the Cubeb Pepper
We will give a update on Monday.
We have used Juniper Berries Before and that has a unique flavor and aroma ?
This weekend we are Doing a Special Event and they want Korean Fried Wings
we are going to try the Juniper Berry and Cubeb Pepper as a Korean Flavor with a few other Korean Spice based BBQ flavor.
We will also try a KFC base with the Juniper Berry and Cubeb Pepper just for Giggles.
We have experimented with our Latest K.F.C recipe and Have it Exceeding the expectations we though it would get.
