You say nobody is talking about adding pepper/salt to the milk/egg wash, well they must have because i remember reading it somewhere and have done it many times. Have also added just a pinch of the spice mix to the egg wash too. Good thing about having absolute proof of those spices i discovered, is that any recipe that anyone claims as being the O.R, i can easily confirm as being real or fake just by seeing if it has those ingredients i discovered. I have ALWAYS added salt and pepper to the milk + egg wash. Cream of tartar however I haven't tried. Perhaps next week when I get my shipment of Grace's Strong Blend.

We were NOT ever impressed with the Grace's Perfect Blend that was Picked up and delivered to Canada on three Trips over there.
We always added Marion kay as a extra Zing ?
Karl would NOT increase the Spices and Herb Amount to the Seasoned Flour or supply extra of it ?
Hope you enjoy it. It is a NOT Bad Product BUT COST is NUTS

This is offtopic, but i cooked my first recipe in months yesterday and the cooking aroma was weak and pathetic. I keep getting this problem. The raw spice mix used to stink up my whole closet where i would store it, and now it barely smells? I literally have no clue what to do anymore. The only thing i can think off is my b/w pepper are low quality and not as aromatic as they should be. And i did buy high quality stuff, but i think even if you buy from a good supplier they can have bad batches. Also the ginger i used was smelling weak too. So weak smelling pepper/ginger = weak cooking aroma.
All fresh ingredients, bought the pepper few days ago, grinded fresh, I did think the pepper seemed too moist and not as dusty/dry as it should be when i was grinding it. I got 7 month old white pepper from Vietnam smelling stronger than fresh grinded ORGANIC b/w pepper from India.
How can i crack the O.R if i can't even replicate my own recipes? i think alot of other people experience this problem and don't realize it

Also, my 7 month old cardamom is smelling stronger than the brand new batch i bought from same exact supplier, same exact origin (Guatemala) the new batch's colour is slightly off and not as good as the old batch. So forget about having FRESH spices if the quality is bad because it doesn't matter. What matters more is a good QUALITY BATCH.
And what's funny is, I needed some nutmeg, (i got whole nutmegs but didn't feel like grinding them) so i settled for the supermarket stuff and i was shocked how delicious this stuff was smelling. It smelt like they grinded the mace in with the nutmeg, delicious tart like aroma. Much better quality nutmeg than the other supplier which is meant to be of a higher quality since they charge more. $6.80 for 30g vs $3.70 30g for supermarket stuff that is MUCH better. I went with best quality supermarket had tho, there is a cheaper one for $2.70 30g.

Did You order Graces from USA Distributors ? Shipped to me from within Canada. Karl has distribution in the USA now and also sent a small shipment to Canada to get things started here too. I had been in touch with him periodically over the past couple of years, so he reached out to me when the paperwork for distribution was finally complete. I'll have 2 1kg bags sometime next week.

Because regular ingredients are being sold and restocked much quicker than the premium stuff. Simply because the large majority will buy cheaper items and the supply chain is short. Premium quality products can have a longer store shelf presence due to the limited pool of buyers. I am also not sure about the positive effects of (long) melding everyone is describing. We all agree that pre-ground items quickly lose their aroma and flavour and that it is better to have whole spices. But when we then grind the stuff ourselves, the negative effects of grinding and storing will magically no longer apply? From the moment you crack your spice, the aroma will start vanishing. I agree you can have quality deviations within the same brand. Herbs and spices are natural products. The big players on the market source their ingredients from different countries and continents. I am a tea aficionado for instance and know you can have very different qualities even within the same garden. This is why so many extracts are being used for consistency. Another point I wanted to mention again: I strongly believe in recipe robustness. I am not bragging, but I can take the lowest quality supermarket items and turn it into great chicken.
