We have been using a Special Brined Injected chicken Ordered from a Chicken Processing Plant which KFC uses.
We worked together with a Brine they suggested and a few our requested items.
One we get then Chicken its dumped onto a wire rack and seasoned with a Dry Seasoning and then a Pre Dusting of Flour. This sits for 1 hour
then the Milk n Egg Warsh and / or water batch and then Placed into the Seasoned Flour and forcedly pressed seasoned flour into and onto the chicken Wings and Drums Double dredged
The Brine and Dry seasoning GIVE so much Flavor Deep to the Bone with massive Flavor and Juiciness which drips out. The stickiness of the ORIGINAL KFC is like the OLD DAYS. the Aroma has increased with this step.
The chicken is NOT FROZEN all is fresh
we have froze some chicken that was Brine and we will see how it turns out ? Our Brine contains a Curing Salt and a Bromine WHICH you typically Do Not want to FREEZE. for a Extended time period like happens at Home Deep Freezers.
A proper KFC original style KFC needs Brining in my opinion

There some Producers who have brine injected chickens BUT I'm guessing more specialty on a retail market.
Even if one does not get it retail you can brine your chicken and get a injector to inject your own home version which is what we did and still do when testing different Brine solutions.
One would have to see what the Packaging says on any commercial sold chicken in your region
I would suggest Doing it at HOME as a test
Brine chicken even in a over night method and your going to get a unreal more juicy chicken and work with a sugar base or corn syrup to get the sticky finger licking not enough napkin effect.

it is close to what we use
we had a special mixture made up with the processor combined effort with what they have and what we wanted
They helps us out for a charity event catering and are also going to make our brine chicken for weekly orders Private label item.
The problem we are having is ALL our C.F.I.A. inspectors are on A BIRD disease control issue in B.C. and it's a major issue in B.C.
we use a Packing house in Edmonton Alberta Canada
The main thing is you can Brine and Marinade at HOME over night and its effective, you can purchase a meat injector on-line or poke holes in your meat before over night brine

Simple Brine
5-6 Cups Water
5 Cups Water
2 TBSP Sugar or Corn Syrup 2 TBSP Kosher Salt 2 TBSP MSG 1/8 tsp. Garlic Powder 1/3 cup Liquid Chicken Concentrate 2 or 3 Bay Leaf

The Bay Leaf's are whole not crushed and Do Get Removed
Typically Inject the Breast, Thighs, and, Drums the Drums can be a pain to inject also. (have used a Large Medical Syringe on Drums)
Wings are a Pain it inject NOT enough Meat to worry about and they can soak over night ( you can use the Large Medical Syringe on Wings also if you Prefer)
Large Medical Syringe #10 Needle work for smaller meat size areas You can used it for ALL meat. (Purchased at Medical Supplier or Veterinarians wholesale or amazon for a few $)
