Phosphates are added to injections to increase moisture holding ability in protein. You can get them from modernist pantry. Another thing that will increase moisture holding ability is increasing alkalinity. You can do this by adding baking soda to a brine. Too much will impart an undesired flavor but a little will go unnoticed.
