In looking at most clone Allspice recipes. There seems to be 3 styles.
#1 - They are all added as equal volumes. Cinnamon seems to be slightly higher weight per volume. It may be a tad heavier in the mix
#2 - Clove and Nutmeg added at half volume to Cinnamon. (1+.5+.5) In this cinnamon is way out front
#3 - Either of the above with a small amount of pepper
So Although I like Candidate #2. It's not a traditional Allspice clone. If anything it loads the nutmeg/mace higher. It's not even close to allspice on it's own

Now in fairness. If the question was. If I was not allowed by law to use cinnamon, nutmeg, mace or clove. Would the recipe taste as good as just adding allspice. I will firmly say no. Mostly as I am stuck with the flavors I get from Allspice. And if it seemed to feature cinnamon as high as the substitutes. I probably wouldn't like it. As I can taste cinnamon at very low levels.
Also with number#2 I have the ability to do as you suggest. double up on the "nutmeg" side. And dump cinnamon to the basement

I do think that 1.25g Allspice subbing in would be the right number though. Glen's version of Grace's having 1.25g Allspice, 1.25g Coriander and 1g of Ginger. Keeps the weight order he lists and wouldn't off in a 200g flour recipe.

I know you reference Glen and Grace Recipe which are NEW AGE RECIPES not the original.

I will say this from Eating KFC in as many countries as possible while Traveling and NOTICING the Drastic difference in Taste world wide.
flg ONCE a Base is obtained ONE can change the ingredients out for ones they Prefer and MAKE their Own Family KFC clone.
REMEBER C.H.S. said this when HE started making the chicken "HE STARTED with the Spices and Herbs the FAMILY LIKED."
If a person is attempting to MAKE Original KFC
it must be a soft, coating that stuck from the Gluey moist juicy flavor that stuck to your finger and destroyed Napkins it was a Red ~ Color with pink around the inner bone typically and the Flecks on the Coat were more then BLACK Flecks of Pepper YOOU could see other Spices and Herbs The Chicken was Aromatic for days and a Empty chicken Bucket were a Room Scenting for 36 hours or more. Sorry this will definitely take this thread off topic. But kind of fits after the above comment.
Let's say based on what Glen gave us for Grace's and what we have learned cooking. In general terms it could be for 200g flour
5g MSG 5g combined Pepper 1.25g Allspice 1.25g Coriander 1g Ginger
Up to there I really think it's in the ballpark. But then.
Thyme Rubbed Sage Ground Marjoram Rubbed
Marjoram being the least works. But for me thyme at a high level has never "worked". I think it's important to note that they aren't all ground so this may make a difference.
What's you best guess at these 3. And it makes a difference if ground or rubbed.
1g Rubbed Thyme .75g Ground Sage .25g Rubbed Marjoram
Perhaps?
