Memory Lane chicken when it was called Kentucky Fried Chicken
there were a large number of people available this weekend at a private function.
Which was primary Older crowd 70 plus years of Life enjoyment.
We made a Fried Chicken which was made with our old recipe which used
Fresh:
Cinnamon Stick Ground
Cardamom Seed
Celery
Garlic
Onion
Mustard Seed Black Ground
Nutmeg
Parsley
Red Pepper Sweet Flakes
Sage Rubbed
Savory Stone Ground
Thyme Rubbed
Tarragon Rubbed
Italian Fine Herb Blend - Crushed but left in pieces
Hickory Smoked Salt
Peppercorn Ground into 3 different size
Black / Lampong Pepper Berries cleaned free of husk and shell PURE
Red
White
Allspice Jamaican YES there is a Difference
Cumin
A.P. Flower
Potato Starch
the spices showed Heavy it the Chicken and we used the spice Both in a Brine and in the Milk Egg Warsh
there WAS NO shortage of spice visibility and flavor.
BIGGEST comment is that this was the Old way it was made and the way the OLD K.F.C. was you could see Spices and Herbs
There WAS NO shortage of Flavor and Aroma
There were NO secret spices or herb just the ones easy found in 1930
We went with a Heavy Black Pepper and White and Red were 30% of the Black Pepper
Sage Heavy used
Ginger Was One of the Heavier used items and DID NOT affect the Flavor Ginger Root Fresh ground acts different then some pre ground ginger
Personally hearing the comments from everyone THEY said this was some of the best chicken they have ate and I would Agree.
cooking it also had a Aroma that was NOT a perfect K.F.C. BUT it was hitting the NOTE* if the Oil was more seasoned with the same cooked chicken I think that it would have came much closer
NOW DO NOT THINK we did NOT try a Cook off HELL YA
it destroyed other KFC clones
The depth to the BONE flavor and moist was LIKE NOTHING ELSE.
we used a Chicken Liquid Base Knorr and Kraft Italian Dressing Bottle for Flavor in the Brine with Meat Tenderizer and some spice mix from above - The chicken looked like 1970 Kentucky fried chicken Red around the Bone - WE temp checked the chicken for proper cooked temp
