I purchased a new bag of Coriander seeds a few days ago as I was running out of it. It totally blew my mind when I opened it. What an orange bomb! It literally smelled like proper dried orange peel. No exaggeration. I never ever got this from any other brand before. I immediately thought about that one analysis that claimed orange in KFC and I realised that poor quality Coriander seeds must have been the initial reason for introducing orange peel to the formulation. If you research Coriander Seeds, many sources will mention an orange-like flavour. I smelled citrusy notes from Coriander Seeds before, but this level of pure oranginess was new to me. On the bag I have, it describes the seeds as having the notes of an 'orange bouquet'. It truly does.
This must also be the reason why many struggle with Coriander Seeds in general. If it is poor quality, it will only deliver nuttiness and can easily be overpowering. Even to the point that you want to replace it with other seeds like Caraway.
It is mind boggling to realise how crucial quality is. This is the second level of cracking the recipe - cracking and reverse engineering different formulae and compensating quality deviations.

11serbs I think the person who would have agreed with you 1000% is Bill S from Mario Kay
His premises on the NEW AGE KFC Spice and Herbs was that the New Age corporation was using inferior Spices and herbs or used alternatives which were NOT the PURE HIGH QUALITY Spices that CHS used Originally in 1939.
CHS also complained that the NEW AGE CORPORATION was using POOR Ginger and NOT the IMPORTED Ginger / NEW AGE CORPORATION then had KFC FRANCHISES add Ginger to the Seasoned Flour.
I will state this position that I have formulated and it's personal opinion Coriander Seed and Coriander was NOT a common spice being sold as a individual item typically in 1939 - It was used in BLENDED spices and Limited Pharmacy Use?
I know people will show cans of the ODD Coriander and say I'm wrong - It's my opinion and finding and I Purchase and collect OLD Spice and Herb Tin's.
What Brand of Coriander Did you purchase ? I will agree its NOT easy to find a Great Coriander

Coriander is easy to grow in the South and mid-South. That's why I always asked for information about whether CHS had a garden. My coriander I grew was "fruity". I haven't grown it since my wife died. I ate a grapefruit flavored jelly bean the other day and thought "that would be great in a KFC mix".

CHS only spoke about Garden when he was a child but never spoke much about it when he was Older except he spoke cooking veggies and how to cook them and he also made reference that the First things he learned to cook in a Pressure cooker was Veggies ?
His major comment on Veggies in the Pressure cooker was that he could cook them in 3 Minutes in the Pressure cooker and NOT use a Steam Tray where they got soggy?
OH and he NEVER once said his Veggies were Pressure cooked at 21.7th PSI he ONLY said they cooked in 3 Minutes and NO Temperature was given for the 3 minute cook

A question in Private regarding Orange has came up and was Orange Spice available in the 1930
There was Orange Peel available By more then one supplier McCormick had it in Spices Bottle and it was a liquid extract
It was NOT sold BY tons of companies except ones which carried extracts or Teas

My Coriander doesn't smell like oranges. To get some added orange, some of my earlier recipes have had ground Orange Rind added at about 1/4 to 1/3 gram in 200 grams of flour. I stopped adding it because staying within the confines of 11 H&S is difficult enough without it.

@11serbs , I wonder if the brand of Coriander Seed you purchased is available in the USA? I don't think so, only available in Germany and Austria if I'm correct. But honestly, it does smell like Orange. Very pleasant. But in a formulation with many other herbs and spices, you don't get oranginess in the final product. At least not at the level I use Coriander.
