170g Self Rising Flour
30g Corn Flour
12g Confection Sugar
12g Salt Fine
4g MSG
4.5g Black Pepper 2g Fine / 2.5g Butcher Grind
7.5g White Pepper Fine 3g Sage 1g Savory
Spice & Herb Mix Dry Rub
20g Garlic Powder
15g Onion Powder
3g Celery Seed Fine Ground
10g Mustard Powder Double Fine
5g Cayenne & Red Pepper Mix
3g Ginger Ground
2g Paprika
1g Cinnamon
1g Basil
1g Oregano
1g Parsley 1g Thyme
Mix the Salt, MSG, Peppers, Sage, Savory together 1 Bowel Mix all the Spices & Herbs Mix Dry Rub together 1 Bowel
add some of the Spices and Herbs with the Salt Mix and small amount of sugar this is added to the Milk and Egg Warsh
Combine flours, Sugar, Salts together and sift Then add the 3/4 of Herb and Spice Dry rub and sift 2nd time
while chicken is getting to room temperature sprinkle some of the Spices and Herbs and Salt and pepper over the chicken
after chicken is Room temp roll into Flour mix and let sit for 5 min Dip flour chicken into a water bath quick 7 seconds
then dip chicken into Milk and Egg Bath and last into the Seasoned Flour and forcefully push flour unto the Chicken while rolling and tossing DO NOT BE GENTLE
Deep Fry for 3 Minutes High Heat Browning Stage remove from Oil separate all the Pieces the Pre Browned Chicken Can sit and then be reheated in the Lower temp as required or bake
Final cook Chicken at lower Deep fryer temp or Bake until Proper Cooked temperature rest wings for 3 to 5 minutes
