This has nothing to do with that big discovery i made, but i am posting this to show what direction my recipe is now going and if it also helps anyone else who believes that cinnamon is in the recipe.
Anyone who says "cinnamon is too strong and overpowering" well you aren't using it correctly because if used correctly, it absolutely works perfectly. If you doubt cinnamon is in the recipe then you don't understand the flavour profile. Do not use ceylon cinnamon either, because it's too mild and will not work, and also has a different flavour.
And how many recipes have you seen recently including cinnamon? just about none. And don't think you can get the cinnamon from allspice lmao! You need the actual thing. Deep taste is right about cinnamon.

I went back through my notes. The last time I had real KFC I felt I could taste a very small amount of cinnamon.
I have cooked 2 times with it and both times it ruined it. I’m pretty sensitive to it. Now that being said I used 1/4 tsp of cinnamon in a 200g recipe. So that may just be too much. I also only used clove with it and no nutmeg. So again that could be it too
I used fresh Saigon cinnamon.

I used cinnamon 20 - 30 years ago when I started drawing up KFC recipes. This is what infuriated Ellsworth so much. He felt like I was "pushing" cinnamon too much, and that it was misleading everyone. This is how I became a "TCK thug". Cinnamon is part and partial to Chinese 5 spice. Chinese 5 spice and Italian seasoning. Lots of debate there.

Yes, but it usually has sat so long that it is weak. I grind and make my own.

Something Interesting is that Both CHS and Bill S.
Indicated Cinnamon to be used in eggs whipped for French Toast.
Also to Whip Ginger with Eggs for Flavor and Baking ?
