We are into a weekend of Testing
Brine Meat Tenderizer Curing Salt
3 separate ways
I have and have maintained that the Original Was always Brined there was NO way CHS could have safely controlled the Chicken in the Old days and when he transported it in his Car in the 1950's
CHS was Very Specific when he spoke about transporting the Country Style Hams he purchased from as far away as 400 Miles that he hauled to Corbin. If he was that worried about cured ham he would have been worried about the Chicken, which was Fresh in those days.
Today we Tested First the Meat Tenderizer which is just a commercial run of the mill Meat Tenderizer which we added Spices and herbs.
We used Chicken Wings and Chicken Tights in a weaker Meat tenderizer because we left it over night
The first Batches Pressure cooked WERE AMAZINGLY moist and juicy pulled away from the Bone it did have little red around the Bone even fully cooked?
it does have a flavor attached from Meat Tenderizer use NOT a bad taste but one which is noticed if you have used Meat Tenderizer.
we are trying a shortened Meat Tenderizer Time period to see if we can remove that taste.
WITHOUT A HESITATION OR DOUBT we will NEVER make ANY type of chicken without Brine / Meat Tenderizer There is to BIG of a Difference in the chicken, PLUS IT has to much of a Original Pre- 1980's KFC taste and Flavor into the meat. It's a 100% must for chicken

If your cooking without Brine, Marinade, Meat Tenderizer, Curing Salt YOUR DOING IT WRONG WRONG WRON WRONG.
There is a NIGHT and DAY effect with Brine, Marinade, Meat Tenderizer, Curing Salt and without.
READ this YOU CANNOT accurately make the ORIGINAL KFC CHICKEN without Brine, Marinade, Meat Tenderizer, Curing Salt.
The solutions that the chickens are dipped in at Processor Prior to shipping does not give a Tenderization and seasoning to the BONE like the Original KFC Chicken had.
