Over the Weekend we experimented with Multiple Cooks, Brines, and Methods of cooks
ALL cooks were Done in Pressure Cooker or Open Fast recovery Deep Fryers.
Brined and Un-brined Chicken were cooked 10 Cases of Chicken Wings (200Lbs)
We staged 4 Older 12L Pressure Pots with different Shortening Beef Fat, lard Crisco, Peanut Oil, and Vegetable Oil with Citric Acid
WITHOUT A DOUBT over whelming Victory for Flavor went to a Blended Beef fat and Peanut Oil
in Order of Most enjoyed to least
1) Beef Fat and Peanut Oil 50/50 Blend
2) Beef Fat or Peanut Oil On there own were close seconds
3) Lard Crisco with Citric Acid was Good
4) Vegetable Oil with Citric Acid was a Average
Brined Chicken WON HANDS DOWN helped produce a older Style Greasy moist chicken.
Best Breading Method
Brined Chicken removed from Liquid placed on wire rack
then Pre- Dusted with A Herbs Base Sprinkle and left to Sit for short time and room temp achieved.
Chicken spray bottle with water and then Rolled in a Pre-Dust of Flour High Base Hard Wheat and Corn.
Chicken Dipped in a Milk, Egg, Butter, with Cream of tarter
Chicken placed On Seasoned flour and Hand Grind Pepper onto chicken Prior to Forcing seasoned flour onto the Chicken 7 - 10 -7 style
Floured Seasoned Chicken then Browned for 3 Minute Approximately and cap the Pressure cooked turn the Heat Down Cook for 12 Minutes.
remove Chicken from Pressure cookers and Rest on a Steam Tray 10 Minutes.
Final Stage enjoy tasting chicken
People were warned Peanut Oil was used when they sampled those (NOT 1 person said they had a allergy to Peanuts ALL DAY)
the Chicken Brined and seasoned Pre-Dusted and then Flour rolled in Seasoned Flour cooked and rested WAS as close to a Original KFC Method have found that can be reproduced at home
It was a Greasy Moist GREAT FLAVOR chicken with a Softer but Firm coating which pulled away like a Sheet OLD STYLE KFC
We also did a Crispy version as people wanted a Crispy wing ALL we Did was throwed the Cooked chicken on a Rack into the Pizza Oven for a Few Minutes and it Crisped the Outside over the coating
