My current thinking is that the best 1 full gram of Allspice (such as for example Glen's final video 'Grace's' mix "might" contain if scaled to 200 grams of Flour) destroyer (as a substitute) is going to be:
0.20 grams Nutmeg
0.20 grams Mace
0.20 grams Clove
0.10 grams Cinnamon
IMHO, adding this combination should win hands down for flavor balance and note evolution over adding 1 gram of Allspice. The only drawback would be that 4 ingredients are replacing a single ingredient, and this may make it tough to impossible to stay within a limit of 11 H&S. But is the goal to make the best tasting Chicken possible, or to religiously adhere to 11 H&S?
PS: Don't worry that the besting substitution only sums to 0.7 grams while replacing 1 gram. Allspice has baggage (albeit mostly non essential, but perhaps of a fruit nature) to the tune of 0.3 grams in addition to delivering the flavors of the listed substitutes.
PPS: As to why one would undertake this substitution, it is my belief in respect to each flavor that 1 gram of Allspice delivers:
1) "Potentially" somewhat insufficient Nutmeg
2) Little to no Mace (I.E., insufficient yet again)
3) Fully adequate Clove (close to a dead ringer match to 0.2 grams Clove)
4) Well too much Cinnamon essence (resulting in a somewhat sweet/fruity sensory overload)
In short, Allspice falls short of delivering the requisite "nuttiness" of the "real" Nutmeg/Mace duo, while meeting the Clove/Eugenol requirement, and lastly going overboard on Cinnamon.
