Has anyone cooked with these?
They could potentially match vial C, and would provide an alternative cinnamon aroma with lowish coumarin.

I tell you what,
it’s very easy to use this rare spice in a very wrong way.
twice I used this in a coarse form and it dominates everything else. even the pepper tasted like cinnamon.
but if you finely powdered this, it will work wonders in your dishes.
my fried chicken aroma came out extremely sweet smelling. Like Vanilla and Sugar combined! and this is just 1/2 tsp per 2 cups of flour

I'm using cinnamon and it doesn't overpower anything when used in the correct amount. I use Vietnam cinnamon, it is the absolute tastiest and best cinnamon i've ever used. It is also called Saigon cinnamon afaik. There is no cassia buds lmao, and i know what vial c is btw, it is not vanilla. Hint: it is used in a certain way in the recipe. it's also annoying to use because you have to prepare it.
