Since we are looking at pictures, I’ll post this one.
Not sure of the origin of this picture, but I disagree with the titles.
I do think Japan both had some form of the recipe, and held true to it for longer than many locations.
My take is that the items in the back are in containers because they are round and could roll, and that careful inspection of the foreground leads one to many more ingredients that is shown by the captioned names.
Starting clockwise from the top, one (biased) guess from the potato cam resolution would be:
1) black and white peppers
2) allspice
3) nutmeg (note the large diameter) Mace unclear
4) sage (note the elongated leaves)
5) basil ( note the large leaves)
6) thyme (leaf) or possibly rosemary (just above the basil there is a different herb with twin tight leaves)
7) orange or lemon peel ( underneath the leafy area above the thyme are some large and curved items) (unless it is the basil)
8) marjoram (or oregano) (at the top above the basil) (something with tight quad leaf structure)
9) scallion or onion ( there are some onion or scallion looking items to the left and down from the marjoram ( unless it is the basil)
10)savory (or sprig thyme) (to the bottom left of the basil)
11) cloves or possibly parsley or coriander or mint leaves (to the left of the savory)
12, 13, 14, 15, 15a?) cinnamon, star anise, cardamom, other? (above the savory appears to be 3 to 5 items, including sticks, pointy things, some dark things and two large pods, unless it is partially the savory )
16 ginger
17 garlic
So roughly 17 (or 18) items in total, but 11 (or 12) herbs and spices, when not counting peppers, ginger, citrus, onion, parsley / mint, & garlic.
If your favorite item is missing like coriander seed or anise or caraway or red pepper, there is room in the 15a spot, of not elsewhere.
