I find star anise works very good. I don't think it is in the 11 h/s tho.

I find star anise works very good. I don't think it is in the 11 h/s tho. A photo of a Russian (I presume) KFC placemat seems to suggest Star Anise as an ingredient. Click image to enlarge. Two pods visible. I wish I could read it... Perhaps this will also be of interest to those who claim they have never detected licorice in KFC OR. Actually, I've never detected licorice in real KFC OR either, but a small amount of licorice seems to help develop the overall flavor/note when kept at below the outright detection level. That said, I exceeded the (or rather, my) detection level once and it made the chicken taste awful. My wife was eating the same chicken right along with me, and she couldn't detect it, and commented that the recipe was great. So this indicates that each individual has a certain threshold of licorice detection. And if KFC actually uses a licorice contributor they must test for this whereby to not exceed most everyone's detection limit.

I love licorice, but never detected it. As for the Russian photo, it looks like cardamom, cheese, pimento, and potatoes are in. LOL

I would like to hear from the Defense and have cross examination of the witness Prior to any ruling on the subject. We will remove ALL Hearsay evidence from the record also.
Star Anise like many spices in the 1920's to 1940's was a limited Item but typically was found where certain Spice Companies sold it. A more Regional Spice Classification of the Time. Regional in reference to where the Company who Packed the item Sold there Spices.

The yield averages being 6.59% and 9% respectively, with the average of both studies combined being 7.8%. Now we're getting somewhere. Star Anise: 100 grams x 7.8% oil x 84% Trans-Anethole = 6.552 grams of pure Trans Anethole Anise Seed: 100 grams x 2.85% oil x 95% Trans-Anethole = 2.7075 grams of pure Trans Anethole Fennel Seed: 100 grams x 2.1% oil x 65% Trans-Anethole = 1.365 grams of pure Trans Anethole 6.552/2.7075 = 2.42 6.552/1.365 = 4.80 Therefore my best answer to date is: 1 gram Star-Anise ~= 2.42 grams Aniseed (Anise Seed) ~= 4.80 grams Fennel Seed Which rounds for ease of remembering to: 1 gram Star-Anise ~= 2.5 grams Aniseed (Anise Seed) ~= 5 grams Fennel Seed Which takes me right back to where I started. Again with wild +/- error bars... Final answer?

Here's a shocker:
The % of Trans-Anethole oil in Caraway oil ranges from 0% to 2.2%, for an average of 1.1%. And oil itself averages about 3%.
Caraway Seed: 100 grams x 3% oil x 1.1% Trans-Anethole = 0.033 grams of pure Trans Anethole
6.552/0.033 = 198.5
It takes roughly an average of 200 grams of Caraway to deliver as much licorice as 1 gram of Star Anise.
For any/all practical purposes there is zero licorice in Caraway Seeds.
