cman So far I have not uncovered any tangible evidence that CHS included either of cayenne or paprika, or a blend of, in his early OR. DFN101 has already multiple times posted a late 60's tin photo. As well as talked about red color chicken, and red on cook's hands and aprons. But no proof has ever come with the claims. The only link and it is weak. Is at one point 99x listed "red pepper" whatever that is to them. But, the bag of that was produced after his death. So it could have been really changed after lawsuits etc as Willy mentions. Personally, if you looked at my baseline recipe I use it. I have cooked without it and with the "blend" or a mild chili pepper. It keeps coming back so it became a permanent member of my base recipe.

Thnx, flg. Smallgree had posted a 1952 ad showing pepper flakes( and the Italian Dressing Mix-I hope he re-posts it). If that was the mix then, we could surmise that the color of the chicken would be brownish as opposed to reddish. Makes also logical sense that you added the red pepper to your base mix. With regards to my mix, I find that the red pepper powder does boost the KFC Or aftertaste. Thus adding paprika would be unnecessary. The negative is that both have an aroma of their own.

You need to Look into KFC NEW History and review the Bulletin's they Put Out in the 70's regarding excessive Oil discoloration and more than Normal Change od Oil from Pressure cookers
How Do you think KFC NEW AGE contended with the issue of Oil Issues caused from the Paprika after they changed to More health conscious OILS
Look into KFC NEW AGE History of Oil issues and Look into when they started using Paprika Extract ? (Washed paprika)
YOU obviously Have NOT tried making Fried chicken in current times with a Heavy Paprika and see what the Oil turns into color

Yup, obviously. Why fook up my oil. Far too much time has been spent discussing paprika imo. Kentucky Fried Chicken that Colonel Ernie cooked was never red in any way here in Halifax, N.S.that I can remember. Mom backs up that statement too!
I'd like to add that my brother in law (now deceased, but would be 90 years old) worked in a warehouse as a youth where Kentucky Fried Chicken arrived on pallets in bags, one bag contained black contents (I don't remember if he said what color the other contents in bags were) and one bag broke open. He tasted it and said all he could remember was how salty it was.

Sorry You are MISTAKEN in the color of the Canadian Chicken and American Chicken of Old Days
YOU need to view the Gloria P Video she and Hundreds including the TV host all stated the Rose Red Color of the Chicken before the Golden Brown Color was adopted as the KFC standard.
There are To Many photo of the Red Rose Color chicken available that Disprove your comment

YOUR Totally wrong if you are trying to mislead people that it was NOT Red color and the meat around the bone had a uncooked color often
I guess Gloria P and others who were on interviews ALL lied about the color LMAO
