Another tidbit. It has been suggested that originally, the contents of the 26oz seasoning bags were added to 10 lbs of flour. I have read several corroborating stories indicating that this was true. I've always wondered why the 26oz bags got larger as the years went by. This is illogical if KFC cut ingredients. If KFC shifted to extracts, then the seasoning bag would have gotten smaller, not larger, don't you think? If extracts were used, and the bags were prepared for 25 lbs of flour, then they should have gotten larger, wouldn't they?
Here is how I look at. "Where's the beef"? I have seen photos of several 26oz seasoning bags, but there is nothing in those photos that indicates where they were used and how specifically they were used, as in how much flour. One such photo is supposedly from Australia, but I saw no authentication shown of that premise.
I have seen little evidence of how flour was procured in the past, as it is suggested that many early franchises were allowed to purchase their own flour.
It is easy to assume that a 26oz bag of seasoning for 10 lbs of flour could be enhanced with extracts to season 25 lbs of flour. But where is the proof?
If the old 26oz bags seasoned 10 lbs of flour, and were chemically altered to season 25 lbs of flour, but we construct our recipes based upon the early bags and use them based upon 25 lbs of flour, then all that we have pondered and theorized about for all of these years has been for nought.

I guess a simple way to Try things is scale recipes at Home to
26 oz Bags of seasoning with 10lbs of Flour
Current Canadian Flour is 8kg Bags which is 17 LBS NOT 25Lbs
I have sent you PHOTO of that in the PAST and YOU have seen the 8kf Canadian Flour Pastry Bags for 2024

DFN, how big were the Jamaican spice bags. The spiciness still intrigues me. And would the Jamaica flour bags be 10 or 17lbs? Did you discern cumin in the Jamaican mix?

I did my first tests on three different blends. The herb blend was the best. The chili blend was close, but second. The licorice blend was third. Three things are necessary for me to continue. 1)The amount of flour that was originally used, which will bring my formula in alignment; 2) I need pastry flour and white peppercorns, which seem to have disappeared from the grocery shelves; 3) I need a pressure cooker.
It is apparent that too much heat kills the delicate "OR" flavor.
Salt is still a problem and is difficult to get correct. My figures are correct but don't seem right. If the seasoning bags were intended for 10 lbs of flour, then the salt would work out. Otherwise, this is proof positive that something is not quite right. I think maybe that the AP flour is not fine enough to keep the salt next to the meat. Somehow is is lost in the oil. Brining simply does not get the salt where it needs to be.

Pastry Flour Should Be used AND it MUST BE SIFTED MUST BE SIFTED
ONLY sift the Flour with Breading Salt which gets sifted also and the seasoning
Willie make ratios mixed to 10lbs Flour PLEASE

Cman understand THIS there are TWO Different aspects to Look at From the way the Original Recipe was made and the Change in 1950's When M.S.G was included
Originally The Salt used was a Much larger Grind which C.H.S. sifted to a Popcorn Consistency Powder (Baker's Popcorn Salt)
1.5oz of salt per 1Lbs of Flour was a Common amount USED BUT C.H.S. also would add MORE Fore ZING
Do Not uses Table Salt it Does NOT uniformly Mix with the Flour and is NOT the Same
1.5oz of Bakers Salt to 1Lbs Flour Does NOT use M.S.G either

Oddly, pastry flour became non-existent in my area. What’s a good ratio of cake flour to AP flour? And do you suggest adding corn starch. Please settle this question as well: Does Popeyes ( sorry Dutch) use a half-half ratio of tapioca starch to AP flour?

Dfn101, Smallgree, Silver: how much salt is added to season 10lbs? I would try 1.5 Lbs. of Salt as a starting point. This assumes no Salt in the seasoning mix itself.
