I certainly agree that CHS was looking for the best fried chicken recipe, as I did for my chili seasoning, but as was implied, all Southerners cook good fried chicken, so what was the impetus that inspired CHS to change what he was doing? The hunting lodge chicken? And what were the spices and herbs at that lodge intended to be used for? Did CHS deconstruct those know recipes to ascertain what made them so flavorful? Smallgree, just thinking about your comment that “Yankees turn everything into a secret”. Looking at the other side of the coin, what if… CHS merely popularized the local recipes. I had written previously that I met a fellow who stated that everyone in his area of Corbin, Kentucky area knew the recipe. So, the recipe is a result of friendly Southern folks exchanging recipes in church functions and country fairs. ( Said with admiration and respect, course) The recipe is an homage to Southern culture.. So, the recipe evolved as a function of hundreds of households tinkering with the recipe and exchanging the results thus perfecting the recipe with CHS acting as a conduit. Everyone in the area taking pride in the recipe. Thus, CHS name the recipe Kentucky Fried Chicken: Not Sanders Fried Chicken. Thus, the recipe can be posted in his restaurant without any harm to proprietary.

something many are failing to associate with BEFORE C.H.S. started using the TERM secret 11 Spices and Herbs NOT secret 11 Herbs and Spices there were other companies using it like Durkee's and others I have posted the Old advertisements on the forum which show up to 10 years prior to 1940's they use terms like secret and they posted the amounts of spices they used C.H.S. just coined the Phrase more than other world wide while the others were a Regional term.
C.H.S. shared the recipe in Canada and I know 5 Family's from the Original Charitable Ownership time who Have Hand written recipes from C.H.S. Brown and Massy had one given to Brown and the Brown Family still have the Original and the NEW AGE KFC has a reproduction which C.H.S. wrote for Brown to Give to the NEW AGE as Part of the Sale.
Leon Pete Harmon had the recipe. which he first recreated from the Old spices C.H.S. left at his location when he went to Australia after cooking for Pete
Marion Kay Original Chicken Recipe had 12 Ingredient's NOT 11 I was told this From Bill S. Marion Kay who indicated the recipe was also changed after the Lawsuit.
Pat's Grace Perfect Blend is NOT the Original either same version as 99-x with flour.
The recipe that Tommy and Cherry S have is listing ONLY 11 Ingredient which used Heavy Ginger and No White Pepper ONLY Black Pepper. which would indicate its a Claudia's Seasoning mix. NOT the Original But similar When they cooked the recipe on the TV show it was similar to KFC.
I will maintain this that the original recipe has more than 11 Spices and Herbs the Vegetable ARE NOT included in the 11 Spices and Herbs Extra items plus Mixed seasoning are NOT part of the 11 secret items.

I'm aware that with each of my recipes which you have personally tested you have mentioned bumping up the quantities, which would be the same as reducing the Flour. With this in mind, should we be focusing more along the lines of 26 ounces of seasoning mix added into 10 Lbs. of Flour, or 26 ounces of same added into 25 Lbs. of Flour (in our efforts to more closely grasp the brass ring)?

Silver, how is the meat quality in your air fried product? I find the velvetted chicken more soft and closer to the meat quality from the restaurant. But I think the spices are noticeably less aromatic and perhaps even neutralized as the cooked product sits. Perhaps, the marination needs to be more acidic for complete neutralizing. Thoughts? Regarding the naming of the restaurant, I was merely making a conjecture on how the original recipe evolved.
Dfn101, what’s a good way to make meat softer. I think 1 tsp of water in the cool oil. But it will evaporate and even explode as the oil heats up.
Smallgree, have you resolved this issue?

Silver, how is the meat quality in your air fried product? Not close to pressure fried as to juiciness and tenderness, but quite comparable to open kettle fried.
