Willie You are correct with C.H.S. comment that the Chicken changed BUT as the Paid Prize Bull paraded around to county fair He had to say some good things about the company
Original Chicken had way more Spices and Herbs In Flavor and Taste.
People complained that the NEW AGE Chicken was more like a 4 Ingredient Fried Chicken than the 11 Spices and Herbs ?
when they claimed to reverse engineer the spice They said Salt, Pepper, M.S.G. with aromatic's.
with your years of experience YOU would remember the Look of the Original Pre 1970's chicken visual and taste more than many.

I have posted in the past, on TCK, that the chicken I remembered was darker than the "golden" colored chicken today. It was not extremely salty. It was obviously covered with visible herbs and spices.
I also commented about recent commercials I had seen showing chicken closeups with visible black specs. It was obvious that the commercials were intended to convince viewers that KFC still contained the original elements. I looked through my KFC seasoning and thought I detected tasteless black specs that appeared to be ashes of some kind. There are no visible herbs at all in my bags.
I grew up in a family of bakers and my sense of taste is well developed. I struggled with taste for a while after catching covid in late 2019. My taste is back and my memory is not defunct.
I like salt and black pepper, and when the chicken began to take on a new character, I began eating more KFC. I have often described the Original KFC chicken as somewhat like eating savory candy, although it wasn't sugary sweet.
Throughout the years, as the recipe continued to change, and the chicken got greasy from inferior oil, I began to eat only the livers and gizzards.
Again, I am not interested in replicating modern KFC. Any demonstration (Glen) trying to find the closest recipe to modern KFC is..............bogus.

I will agree with your above posting that the Chicken became more salty and changed color.
I know I have posted this so many times it become a Repeat BUT not to New members.
When you review the Gloria P Radio or Donahue Portions SHE CLEARLEY states that the ORIGINAL was a Rose Red color NOT a GOLDEN BROWN,
ANY OLD KFC COOK will all comment the Seasoning was a Red Color with real Herbs and Seasoning including Black Pepper. The Original Pre-1970 Seasoning had a More distingue Aroma of the Sage, Paprika, Mace, with Pepper. While the NEW AGE is a Pepper infused Blast.
There is a major shift when the Chicken went to the Golden Brown Crispy Chicken of New AGE KFC.
Many Blame Brown and Massey for the Change's to the KFC style chicken WHEN Brown and Massey Did NOT intentionally change the Chicken recipe there changes were ingredient shortages. While Huebens and RJ Reynolds NEW AGE made the drastic changes WHICH C.H.S. Disliked
Todays Current Chicken at NEW AGE ONLY has 2 items Bread in the Original KFC Breading and Hand Bread, While most KFC Sandwich Pieces are Breaded in the Buttermilk seasoned Flour or are the Frozen Pre-made Chicken which can be cooked in the Open fryers Fast.
If your Ordering a KFC Chicken sandwich YOU must ask for the Sandwich with the Original Bread Chicken if you want that Taste otherwise You may get the Buttermilk dredge Fillet which is Double dredge to make the Chicken Piece look larger

I cooked 1950s KFC chicken livers yesterday. How did I do it? I used two different bags of seasoned flour which contained two different mixes. Then I added more aromatics, including Saigon cinnamon, some nutritional yeast, and toasted sesame powder. I'll match up the recipes and see which elements may have dominated. I used 5 tsp of salt (I was able to average the salt because I use the same amounts as a standard) for 2 cups of pastry flour. I now believe that the 11 vials contain the flavoring aromatics, and the base ingredients are not in the vials. The 11 ingredients given to Shelton were groupings, as in multiples. I'm sticking to this and will not be hopping on the Grace's band wagon. I will no longer entertain testimonials that any certain mix "is very close" to the KFC crap sold today. I believe that CHS gave out the most recent KFC recipe to whomever he gave recipes to, which means Grace's and 99X were new formulas. Just think, CHS thought he was an awesome dude. He knew he was contract bound, and was proud of the "11 Hs&Ss" claim. He probably gave people the minimum 11 ingredients needed to make his chicken.

Just because There is a Phase 11 Secret Herbs and Spices or 11 Secret Spices and Herbs The Vegetables and seasoning added are NOT spoke about BUT were INDICATED on OLD 1960's K.F.C. Bags with the Simple words Vegetable & Seasoning
C.H.S. was a Lawyer and Followed the 1905 FDA Rules So when He Started He used the PHRASE 11 Spices and Herbs Which would Indicate under the 1905 FDA Spices were More Used than the Herbs as the Rules for Alphabetical Did Not come into play until after C.H.S. Sold Out and The New Age started changing things ?
C.H.S even up until His passing Often referred to it as 11 Spices and Herbs.
from your Chili recipe YOU KNOW what aromatics YOU NEED in the Herbs and Seasonings You use.

Karl has stated in the youtube videos that he "doesn't know" if it's the OR but I think that he's playing it safe. Prior to all the attention from the Glen and Friends video, the Grace's website say it was the 'original recipe' but then after they got all that publicity, the wording was changed to say it wasn't. Karl is pretty easy to get in touch with. I've had several Facebook conversations with him myself. He's a very nice down to earth person. I think he's being as up front as he legally can without jeopardizing his business. |
