We can see that KFC spice mix is grayish green in color, but here's the confusion. It's very obvious that red pepper (chili powder and paprika) is included in the recipe. Adding these ingredients gives out reddish color to spice mix. As far as I'm concerned, half of the herbs and spices that KFC use are laboratory clones which could be the reason. In Colonel Sander's bbq recipe, chili powder, paprika, and cayenne pepper are all included. I'm wondering if CHS seasoning was actually red and not grayish green that KFC have now. Does anyone have any information on this?

I believe deepfriednew101 has posted a photo of an opened spice and herb bag wherein the content had a reddish hue. Perhaps he will chime in.

1. A product disclosure sheet indicated that KFC contains Annatto - which is also a light reddish colour. I bought some Annatto seeds and have used them in my seasoning mix.
2. My latest season mix appears to have gone awry. The colour has changed to a light khaki - which I think is due to the caramel in the beef and chicken stock cubes.
Perhaps the stock cubes should only be used in the marinade.
3. Store-bought KFC Original chicken in Australia has changed - it is more of a light yellow golden colour now and has lost its flavour - a similar shade to fish batter.
The bronze brown coloured version that have changed from tasted so much better
4. The bakers' flour I have been using isn't working out - am going to return to just plain and cornflour.

Annatto is typically added whereby to impart the golden yellow color you mentioned. KFC changed similarly here in the USA, just as you describe, and I recall my shock upon opening the bucket and seeing golden yellow brown. And tasting it and being highly saddened by the new flavor.

The OLDER Spice had a Red Hue color to it and the Newer spice is more a Greyish. Sweet Pepper, Cayenne, Paprika were all used in the older NEW AGE KFC Then they went to the Golden Crisp Chicken that CHS hated. Older Photo of spice with Red Hue New KFC Spice 2022

My seasoning is a lot redder than both pictures shown above. How much should I use? 11 Herbs And Spices Mix with a Tbs of Salt and 2 Cups of White Flour 1) 3/4 Tsp of Coriander 2) 3/4 Tsp of Nutmeg 3) 1/2 Tsp of Garlic Powder 4) 1/4 Tsp of Ground Ginger 5) 1/2 Tsp of Ground Sage 6) 1/2 Tsp of Ground Savory 7) 1/4 Tsp of Ground Marjoram 8) 3/4 Tsp of Cardamom 9) 1 5/8 Tsp of Red Pepper (3/4 Tsp of Paprika + 3/4 Tsp of Chili Powder + 1/8 Tsp of Cayenne Pepper) 10) 3/4 Tsp of White Pepper 11) 4 Tsp of Tellicherry Black Pepper

I would bump up the Coriander and Ginger by 1/2 TSP each, plus add 1/4 TSP of Anise Seed. 2 TBSP Salt.
