You guys all know that there was a 1969 lawsuit regarding the use of tarragon vinegar. This makes me think that there is a possibility that tarragon vinegar was used in KFC original chicken brine. Although KFC original chicken is pressure fried, it's brined overnight in water mixed with salt and other ingredients. Perhaps, adding vinegar helps chicken tenderize its meat and gets rid of poultry smell. Tarragon vinegar gives additional herbal flavor.

I think they are brining or adding a vinegar solution to the chicken meat somehow. When I get a chunk of the OR chicken and peel it open it has a very obvious sour/vinegar like smell that is not coming from any of the herbs/spices. I had family members smell it too and they all agreed it smells like vinegar. I haven't been brining any of my attempts i have posted here on these forums but i'm going to try a modified version of this brine www.thespruceeats.com/poultry-brine-recipe-333865

Vinegar tenderize the meat. I remember working in Spain at Eddie Rocket's, we would marinate the chicken in pineapple juice.

Pineapple Juice is different then Vinegar as a tenderizer Yes Vinegar can work and does wonders for cabbage and hard rooted Veggies for crisp in Pickling and softening in Slaws
