Not sure if this has been discussed before, but just wanted to say that frying breast alone will not give you the complete note. I have observed when frying bone pieces such as thighs, drumsticks, and wings that they themselves give a unique chickeny aroma that i associate with kfc. I usually only ever did breast, so didn't notice this until i started frying more bone pieces recently.
If a kfc back in the 70's was only frying breast alone it 100% wouldn't smell the same, or as good as a kfc frying the bone pieces aswell.

We try and stick to more Spices.
Yes we have used phosphates in Brine BUT with the rotating Staff issue it's hard to have them use it correct ?
We have been using a Milk & Egg Brine Lately with Pickling Spice, Garlic, Ginger
