In Canada we are currently having a Flour and Baking Item Shortage and Definitely a Quality Control The Coating is NOT getting a Cornflake effect cook and it's also causing the coating to fall off the Chicken. We have ordered ALL NEW Flour and shipping back the Last Skid Load received we have open 4 Bags and ALL the Same issue

We use a Tri-Blend of Wheat, Corn Flour, Barely Flour but the Wheat Flour was OFF in the last Batch.
The replacement Flour the wholesale sent out has been Better and more responsive in Deep Frying and Baking.
We are going to attempt a Oatmeal Flour added to a Recipe for a experiment.
The 1930's and War Time Flour was more Blended Flours then and One Pure Grain

Do you have access to "Ardent Mills" flours in Canada? I think their products are excellent.

Because we Use so Much Flour we use a Pizza Dough Flour which seems to work the BEST and DOES NOT KILL THE Pocket BOOK.
WE Do have Ardent Mills in Canada just our Major Supplier does NOT carry it.
Like anything sometimes we settle for other items due to Convivence.
Our Flour Has NOT been a issue in the Past just this Last batch was CRAP.
The replacement Flour is back to almost normal.
I will be sourcing some Ardent Mills and testing it
