From direct experience in making Spelt Bread, which is a favorite of mine, I can vouch that Spelt delivers a distinctly nutty flavor which is very reminiscent of that which I recently experienced for the combination of Coriander and Mace in my successful Recipe #17.
Normal Spelt has the color of whole wheat flour, but a bleached version known as White Spelt Flour is also commonly available. It may be well worth giving a try as the flour for KFC_OR cloning efforts.
Common Wheat Flours (natural or bleached) do not possess the background nuttiness of Spelt Flour.

There is also an unbleached "White Spelt" flour.
