Here is my current list:
Coriander Seed Allspice Anise Seed (Aniseed) Nutmeg Clove Mace Cinnamon
On deck: Caraway Seed, Star Anise, and Fennel Seed
The list is in no particular order. No single one of these ingredients will suffice on it's own. The key lies in combinations.
Special mention: Celery Seed adds a fantastic flavor, but does not evolve the note. It acts more like an Herb.
No Herbs are involved in developing the note.
MSG does not evolve the note.
Pepper does not evolve the note.
Allspice delivers many of the flavor and oil characteristics of Clove, Nutmeg, and Cinnamon. Reduce to outright remove Clove, Nutmeg, and Cinnamon when using Allspice.

No Herbs are involved in developing the note. Agree. I almost think any combination of herbs that blend well and aren't too strong to stand out would be all that's required. I might add ginger to the above as I think it blended with other ingredients helps with the note.

Edit: I should have also stated "combinations" as "combinations plus quantities".

If I was brave, I would re-cook my Recipe #17 sans for leaving Ginger out, whereby to verify if the all important flavor/note vanishes or remains.
